Penne Pasta with Spinach and Bacon

It was wonderful! I loved that it used up some excess ingredients just hanging out in my pantry. I am usually not one who likes the simpler recipes, but I loved this! It was super easy and yummy! To quote Yo Gabba Gabba "try it, you might like it."

Glazed Meatloaf II

I think this meatloaf was pretty good. It did seem to be a little dry when cooked according to these directions. I think if I attempted to make it again I would double the amount of glaze. Not the best meatloaf that I have ever had, but it is worth a try.

Corned Beef Omelet

This was super! I had some leftover corned beef from the night before and some spare green onions. It was terrific. We made some cheese grits and had some fresh strawberries to go with the omelet. My two year old gobbled it up! It is a winner.

Banana Pancakes I

This is super. These are some of best pancakes that I have ever tried. The banana flavor was not overpowering. I did think that my batter was a bit runny when I followed the recipe exactly. That is an easy fix! Highly recommend.

Grilled Salmon I

This was super! I never like fish leftover, but this was super the next day. The marinade makes a nice crust on the cooked fish. I highly recommend as written!

Grill Master Chicken Wings

I loved these wings! They were a big hit. They were not overly spicy, but still didn't have that wimpy watered down taste. You will want to eat and eat and eat! You might want to double the recipe if this is for a party. It didn't seems to make that much food. YUM

Spanish-Style Quinoa

This was very easy and hands off to make. This was my first time using quinoa, but it made a believer out of me. I ate this on a tortilla with sour cream and salsa. I really liked it this way. My two year old gobbled it up on burritos. I will make again.

Chicken Caesar Pitas

Loved these, but they were a little more labor intensive than I had bargained for. These may be the best pitas I have ever made. I just need to make sure I have plenty of time to work before I attempt again. Thanks.

Slow Cooker Cranberry Pork

This was good. It was easy to prepare and smelled great. My only qualm is that the meat is so expensive that you want a knock you out flavor. This recipe did not give me that. I need more bang for my buck.

Beezie's Black Bean Soup

This was a HUGE amount of food. We had tons left-over. I have really been into black bean soup lately, but this was not one of the best. It needed more pepper and a dash of hot sauce. I hate when I feel like I have to add quite a bit of hot sauce to make food taste good and that was the case with this recipe.

Pecan-Crusted Pork with Pumpkin Butter

Yummy! This is a great recipe for a pork chops. My husband made these one night recently and we all loved them. There is a lot of the pumpkin butter left. We just froze it for a later use. I will make again.

Southwestern Corn and Walnut Dip

We have appetizer night once a month at my house. I paired this with tortilla chips. It was the hit of the night. It was super easy to throw together. It was complete before the frozen appetizers we bought were finished heating in the oven! I will add to the appetizer rotation. Thanks!

Honey Baked Chicken II

Yum! I can't say enough about this fabulous chicken. It was perfect. I never crave things that I just ate, but I wanted to make this two or three nights later. I used four chicken breasts because that is what we had.

Restaurant Style Mac and Cheese

This was what I like to call a poverty meal. I made this to go along with a hot dog and a can of green beans. It was the end of the month and the budget was super slim. I wasn't expecting much because it was a throw together mac and cheese. I did like the end result. I do think it tasted like the boxed kind, but it was a nice addition to a budget table!

Slow Cooker Lasagna

Not the recipe for me. I did not change much, but I did add a little extra water. My crockpot has the tendency to burn things without a lot of liquid so I was paranoid that might happen. I ended up with the opposite end of the spectrum. I had a runny mess on my hands. The taste was nothing special and this was a bit time consuming for the morning slow cooker scramble. I think there are better recipes for a slow cooker.

White Bean and Artichoke Salad

Pretty good. I made it the night before so it had a little time to sit. I made this because I had two extra cans of cannellini beans sitting in my pantry. It was a great way to use the beans. I made this as a side item to go with the Parmesan Orange Roughy. It was a great meal. Thanks.

Fantastic Black Bean Chili

We followed the recipe exactly. I really loved the mild flavor. My toddler even liked this recipe and he is not a chili fan. It makes a lot of food. The leftovers were pretty tasty the next day. What a tasty and easy lunch! Yum!

Bacon-Wrapped Chicken Stuffed with Spinach and Ricotta

Let me just say that this was my first time preparing a meal such as this. I typically leave the pounding/stuffing recipes to my husband. Despite the fact that it did not look perfect, I was pleased with the taste. Be careful adding salt since the bacon is very salty already. I am glad I gave this recipe a try! I must admit that it looked a little gross coming out of the oven. There was a lot of liquid, but it tasted good so I quickly got over that.
