Crab Stuffed Flounder

This was delicious - the whole family loved it! I used 2 cans of crabmeat and 2T of mayo in the stuffing because I knew they would all love more stuffing. I also used Panko breadcrumbs instead of the saltine crackers (about 1/3 cup). I folded the flounder over the stuffing. My son was upset that there wasn't enough for him to have another serving! Thanks for a great recipe.

Cranberry Baklava

This was so amazing! My whole family went nuts for it, even my husband who usually doesn't like very sweet desserts. This was my first time using phyllo dough too. I used pecans instead of walnuts because I like them better and I had them on hand. I used 1 cup of honey with a little water added. I didn't have enough filling so I used the whole 12 oz. pkg of cranberries and 6 oz. pkg of nuts. Thank you for this recipe - I will be making it for Christmas day dinner!

Chicken, Sausage and Zucchini Pasta

This was a really great recipe that I will definitely be making again! I followed the recipe exactly except that I took the sausage out of the casings (I only used three) and I cooked the sausage right with the chicken. I had previously frozen about 2 cups of zucchini from the summer harvest - it was already peeled and cubed, so I just mostly defrosted it and added it in at the end. This was a great meal!

Creamed Cucumbers

This was delicious! The whole family loved it including the kids. I used lemon juice instead of vinegar and fresh parsley instead of dried; otherwise, I followed the recipe as written. It was so good and is my new favorite cucumber salad recipe!

Crab Cakes Chiarello

This was delicious! I've made it twice now and the whole family loves it. The panko bread crumbs really make them perfect. Just a couple of notes - I sauteed them, not baked ... I just can't see that working, but maybe I'll try it someday. Second thing - using a 1/4 cup to make the patties, I only get 12 patties, not 18. These are amazing - terrific recipe!

Pecan Breaded Chicken Breasts

This was a HUGE hit with my family! My two 9-year olds absolutely loved it and my husband did too. Interesting because normally my husband wouldn't be crazy about a sweeter recipe. I pounded 3 chicken breasts very thin then cut them in half to get 6 pieces of meat. Fried in olive oil and butter. Warmed to serve later in the oven and made a gravy with the drippings in the pan. Great meal and will definitely serve again very soon!

Fried Broccoli

I was looking for something more interesting to do with broccoli and this recipe did the trick. I used fresh broccoli, chopped onion, chopped garlic, salt and black pepper. Thank you for a simple but delicious recipe!

Zesty Penne, Sausage and Peppers

Made this tonight - it was a big hit! I didn't have plain spaghetti sauce, just vodka sauce, so I only added a little bit of cream cheese (~2 oz.). It was a great meal and I will definitely be making it again!

Chicken and Bacon Shish Kabobs

I made this with boneless pork chops instead of chicken because that's what I had on hand. Also, I used yellow and red bell peppers and red onion as my vegetables (again, that's what I had in the fridge.) My family LOVED it! The marinade is delicious and the bacon really adds to the flavor. Thanks for a great recipe - I will be making this again very soon!

Smothered Chicken Breasts

This was an instant favorite with my family! I will definitely be making this again. I used all the ingredients as written, but I did as one reviewer suggested and cooked the bacon first, then I drained the fat (saving it) and cooked the onions in about 4T of fat and cooked the chicken in the rest of the fat. Then I put everything together and put it in the oven on low temp just to melt it all together. It was delicious!

Butternut Squash Casserole

This was fantastic! I did two things differently: first, since I had previously peeled, cubed, and frozen my squash from the summertime, I thawed it out and roasted the cubes until soft. Second, I substituted pecans for the vanilla wafers in the topping. It was fabulous and I can't wait to make this at Thanksgiving! One word of warning - this recipe requires the oven temp at 425 and I made with a roast chicken which was cooked at 325. I should have made this ahead of time and then just warmed it up before serving, but I didn't think that far ahead, so I ended up cooking at 325 then raising the temp at the end (causing the chicken to spatter everywhere!). Just try to plan ahead and think about what else might be cooking in your oven at the same time. Despite that jockeying around in my oven, everything still came out perfect!
