Cranberry Squares

I agree with Krysta. I was hoping for a crust more like shortbread. I don't understand why people save cranberries for holidays or have "leftovers". I serve cranberries all year long!

One - Two - Three - Mexican Macaroni Salad

Hellman's put out a similar recipe to this a few years ago and I've always had good comments about it. I also add some "extras" and a blob of lowfat sour cream to make it creamier.

Mexican Style Cornbread

If you don't have buttermilk, just stir a Tablespoon of either lemon juice OR vinegar into regular milk and let it sit a few minutes. You will get that same thick, tangy effect that buttermilk gives.

Baked Corn

Too greasy with this proportion. Use 1/2 cup butter and one cup sour cream (lowfat is fine). I sometimes sprinkle it with snipped chives or shredded cheese. The leftover cut squares can easily be frozen, then individually reheated in the microwave as needed.

Pepperoncini Beef

If you find the pepperoncini too hot, try using banana peppers. They give a nice pepper flavor without the "bite".

Cola Pork Chops

Add a tablespoon of mustard to the sauce. Brown a round steak like you would use for swiss steak.Cover it with thinly sliced onions and pour sauce over. Bake as directed and you will have a treat!

White BBQ Sauce

Steam some chunks of redskinned potatoes, then marinate them in this sauce for several hours or overnight. Thread on skewers and grill until warm and browned. Great with any meat.
