Judy's Strawberry Pretzel Salad

love this! I make it with raspberry jello/rasbperries instead because I prefer the tartness. Also, only use 1 package cream cheese. everything else I do pretty much as states!

To Die For Blueberry Muffins

I usually try make healthier muffins so that I can feel better about serving them for breakfast- wheat flour, natural sugar, etc... but my husband has been asking for a REAL blueberry muffin for a while, so I decided to make these. These are definitely the real deal! I still cut back the sugar a bit (about 2/3 cup) and used brown sugar for the crumb topping instead of white. I think I could have halved the topping and been fine- I ended up throwing a good bit away. Anyways, minor changes aside, this recipe is definitely to die for! I'm about to head for seconds!

Spicy Black Bean Cakes

This is a great base recipe, so thanks! Once i made these with regular potatoes because I didn't have sweet. I've made them with sweet potatoes as well and like them both ways--- I'll probably go with sweet more often because they are more nutritious. I halve the recipe as it's only my husband and I, but still use a whole egg. A bit more cumin, a dash of cayenne and about 1/2t chili powder to spice it up a bit for us. Love them!

Chinese Chicken Fried Rice II

Good base recipe- I've always wanted to try fried rice but figured I'd mess it up or something. This was a good guide. I definitely changed things up a bit- brown rice instead of white, no chicken, and 2 eggs, as well as a bunch of veggies (diced zucchini, green beans, etc.) This will probably be my go to meal on those days when I just don't have energy to make something more complicated. Thanks!

Mushroom Rice

After reading reviews and hearing the complaints about this being a bit bland, I tried to spice it up a bit. However, it still turned out pretty bland for our tastes. I may use the idea in the future, but will add some more seasonings to spice it up and make it a bit more interesting! Used the leftovers to make veggie fried rice, which was good!

Baked Spaghetti Squash with Beef and Veggies

I was pretty skeptical about this dish, but I made it tonight for dinner and my husband and I were both pleasantly surprised! This is a great base- I didn't follow the recipe to a t, but it still turned out great! I only used 1/4 lb ground beef, through in some onions, mushrooms, green peppers and zucchini (we love veggies) and used a bit less cheese then called for. Definitely a great fall alternative to spaghetti. I'll definitely be making this again before the fall's over! Make sure to sprinkle some parm on top :)

Gramma Brown's Corn Chowder

Great meal for a lazy sunday afternoon! I left out the celery because, well, I always leave out the celery- also left out the bacon. While this recipe was good, it did need something. That may be because I left out the bacon, but I felt like it needed some seasoning besides just salt.

Cindy's Jambalaya

I've only ever had Zataran's jambalaya so I wanted to foray in the world or something a bit more authentic. I love this! I left out the celery, added a bit more peppers and didn't use the shrimp. It turned out excellent! Next time I might use a bit more cajun seasoning then called for (I used the recipe from this site) because we like spice!!

Cajun Chicken Pasta

LOVE this recipe! I use 1/2 cup milk and 1/2 cup lowfat sour cream instead of the heavy cream. It's definitely not as thick as it would be with the cream, but if you let it cool a bit it thickens up, and it works for my husband and I! This has become a regular for us, though I use whatever veggies I have on hand. Broccoli especially tastes great in this dish!

Cheesy Chicken Pot Pie

Liked the idea of this recipe, thought, next time I'll leave the cheese out. I love cheese, but it didn't really add too much to the dish, and since it's expensive I'll use it in other recipes instead! Added some herbs and spices because I thought it would be bland otherwise. Good base recipe, though!

Butter Chickpea Curry

This makes a LOT--- more like 6 servings than 4. May tone down the spice level next time I make it- it wasn't that it was too hit, the spice just seemed to be overpowering, if that makes sense. Served it with the "naan" recipe on this site and it tasted great.

Chocolate Chip Banana Muffins

These are great! Thanks for this basic recipe! As usual, I made some changes to make it a bit healthier. 1 cup AP flour, 3/4 cup whole wheat. Brown sugar instead of white. And 1/4 cup canola oil, 1/4 cup applesauce. SO yummy and moist! Usually I have to freeze muffins so they don't go bad because me and my husband can't eat them fast enough- these are near gone though- no need to freeze!

Playgroup Granola Bars

As written, this recipe is more like an oatmeal cookie bar than a granola bar. Very tasty, but very sweet. The second time I made these, I cut the sugar down to 1/3 cup, used a bit less honey, and threw in some applesauce to make sure there were enough wet ingredients still. Like others said, this recipe is nice because you can change it as you wish. I through in a handful of almonds, coconut, craisens and a small handful of mini chocolate chips. They turned out great! Now quite as satisfying to the sweet tooth as the original version, but healthier and still tasty!

Jay's Signature Pizza Crust

Great recipe, and you can definitely tweak it by throwing some spices or parmesean cheese in with the flour! I've made this twice, and both times substituted increasing amounts of the all-purpose flour for whole wheat flour and it came out great (started with 1 1/2 cups and then 2 cups)! The first time I made one pizza with this recipe and it was a very thick crust. Second time, I split the dough in half, froze part and made a thinner crusted pizza with the other. It was still thick enough for our tastes!

Grilled Portobello with Basil Mayonnaise Sandwich

My husband and I just discovered the beauty that is the portobello when he ordered it at a restaurant a few months ago. I made this tonight (scaled down for two people), and we both loved it- especially the basil mayo- that really made the sandwich! The only thing I'll do different next time is to use less balsamic vinegar when marinating the mushrooms. While we both love balsamic, we thought the flavor was a bit too overpowering. Great recipe though, thanks! I'm sure I'll make it again soon!

Kabob Marinade

We loved this! I did adjust a bit to make a smaller portion, and used quite a bit less oil to cut down on far, but it was a great base recipe. We used it to marinate the veggies we used too, and that was a great addition. Make sure to use it for your mushrooms, those were my favorite!
