Grilled Chicken Burgers

Awesome burger. I didn't have all of the vegetables that the recipe called for so used onion, peas, tomatoes, carrots and shredded zucchini. I also added some powdered chicken bullion while the veggies were cooking. I followed the rest of the recipe and these are up there on the best burgers I've eaten list. Next time I'm going to do feta, sun dried tomatoes and spinach. Oh the possibilities!

Pumpkin Apple Streusel Muffins

These are delicious muffins and taste just like Fall. After reading many of the reviews, I made a few alterations to make them a bit healthier. I used 1/2 white and 1/2 whole wheat flour, used applesauce instead of oil and think they are probably better for it. I used only 2/3rds of the sugar and did 1/2 brown and 1/2 white. I did not make the streusel topping and am glad I didn't. The muffins are plenty sweet without it. Awsome recipe!

White Zinfandel Chicken

The spice mix promised a lot just by the smell but after cooking the chicken, it really did not have as much flavor as I expected. I added minced garlic for more flavor and that helped as well as going heavy on the wine. Maybe if it marinated for longer it would hold the flavor of the spices better.

Mashed Chipotle Sweet Potatoes

Great recipe. I added some brown sugar to the top (as recommended by others) so it would caramelize a bit while baking. I tasted the mix before the brown sugar was added and after with the brown sugar was much better. It adds just a touch of sweet to counteract the smokey heat from the Chipotle. So easy to make.

Spicy Vegetarian Lasagna

This is a really great starting place for a vegetarian lasagna. From making others like this, I've learned that unless you bulk it up some with other veggies it just isn't that filling. I also make it a bit healthier by using low fat cottage cheese instead of Ricotta. With the peppers and onions, I add in broccoli, mushrooms and spinach(frozen). Put in as much as you want. I follow the directions as written for the sauce but keep in mind it will not look very sauce like with the extra veggies. No worries though, use it like the recipe suggests, it still works great and tastes even better. I add extra red pepper flakes to the cottage cheese mix and only use one egg. I can't imagine using 4 eggs. I also sprinkled the mozzarella on after putting on the cottage cheese mix. I know I've listed a lot of changes, but it really is worth playing around with to make it your own.

Baked Brie in Puff Pastry

Tastes great but I used a couple of the other suggestions. A heaping layer of apricot jam and a generous portion of sliced almonds both in the center and on top of the brie. When using the puff pastry dough, I found using two cans worked perfectly. Lay them out and them press the two sides together to make a larger sheet. After wrapping the dough around the brie, I wrapped the brie very tightly in plastic wrap and then froze it for about 3-4 hours. It turned out perfectly! When baking, make sure there are no holes in the pastry!

Slow-Cooker Posole

Great recipe and even my husband whose family makes this every New Years loved it. I used chicken broth instead of water and it had a great flavor. The best Posole recipe I have ever used.

Peach Cobbler II

Tastes great but follow the suggestions about reducing the sugar. I used frozen peaches, turned out great. It does take a long time to bake though, so plan accordingly.

Broccoli Chicken Divan

Great recipe and so easy to do. I added about 3/4 cup sour cream as suggested in other reviews and it tasted great. I didn't mix the butter and bread crumbs together, instead I sprinkled the bread crumbs and then ladled the melted butter over top. I do suggest you use more brocoli than what is called for, it really cooks down. You can make this ahead and then just add the soup mix and toppings when ready to bake.
