Penne with Spicy Vodka Tomato Cream Sauce

This is a delicous tomato sauce. It is different than other sauces because the vodka brings out other flavor compounds in the tomatoes. Very simple and makes a satisfying dinner.

Homesteader Cornbread

Vegetable Fried Rice

I didn't have any peanuts so I left them out, but this was still very good. I also stirred in a couple of eggs near the end of cooking. This is an excellent basic recipe that you can add anything to.

Restaurant Style Beef and Broccoli

This made a really delicious and simple dinner along with some fried rice. It was much tastier than most Chinese takeout I have had, and I feel better about eating it because I know what is in it. I will make this in the future when I am craving Chinese food.

Refried Beans Without the Refry

These beans were delicious and so easy to make. I have always loved Ducal refried beans and wanted to try to re-create them at home, so I used black beans instead of pintos. I only used 2/3 the amount of water because that was all my slow cooker would hold, and left it on low all day. I didn't drain any of the water before pureeing with my immersion blender. The resulting mixture was a little soupy at first so I mixed some in with some rice and made black bean soup, which was awesome. After sitting in the fridge overnight the leftover mixture thickened up to a perfect consistency. This made A LOT so I put half in the freezer to use later. I did not find them to be too salty and was surprised how good they were with no added fat. I couldn't taste any of the jalapeno so I would recommend using more if you want it to be spicier. I will be making this again!

Slow Cooker Beef Barley Soup

When I first made this soup, I made it exactly according to the recipe. I had bought all my ingredients fresh that day so the only thing I could think that caused it to go wrong was the canned beef broth. So I made it again, this time with a quart of beef stock (the kind Swanson makes). I'm sure it's not as good as homemade stock would be, but it was a vast improvement from the canned broth. That is the only change I would suggest to this recipe. Otherwise it is great.

Hearty Split Pea Soup

Delicious! I did make a couple of small substitutions, but I'm sure the recipe would be perfect just as is too. I used a smoked turkey leg instead of ham, because that's what I had on hand, and used a quart of chicken broth in place of most of the water to add more flavor. Also didn't add any milk because I thought it was really good without it. This is a super cheap, easy and satisfying dish. It's going to become a go-to dinner this winter.

The Best Blondies

Oh man, so delicious! As someone who doesn't really care for chocolate it might come as a suprise that I've never actually had a Blondie. I made 1/3 of the recipe in a 9x9 square pan and used dark brown sugar instead of light. They are super chewy, almost caramel-y in flavor and really satisfy the sweet tooth. :)

Cherry Cheesecake

My mother has been making this "cheesecake" since I was a kid. This dessert WILL NOT be firm the way a typical cheesecake is, because it is not a custard & is not baked like most cheesecakes. I think many of the people who gave bad reviews are expecting this to be like a baked cheesecake. The name "cream cheese pie" is probably more accurate since this dessert is more like a pudding pie. I still think it's delicious, but people shouldn't expect it to firm up like a New York style cheesecake. It's supposed to be pretty soft even after it's set.

Lemon Cream Cupcakes

I LOVE lemon baked goods so I had to try this recipe. I saw that another reviewer had used some yogurt because they were short on sour cream, and since I didn't have any sour cream I used all raspberry yogurt. The flavors work perfectly together. These cupcakes have just the right amount of lemon and are moist. I think I may have left mine in the oven a touch too long because they were slightly crispy on the outside, but I like that. The icing is simple and tasty.

Challah I

This was the first loaf of bread I ever made, and I'm going to have to make more because it's so delicious! I only made one loaf. It came out with a beautiful golden brown crust, the slightest hint of sweetness from the honey, and a nice soft interior. I think I added about an extra 1 1/2 cups of flour but it was fun to knead it and braid the dough. Thank you for a great recipe!

30 minutes was too long. The part that wasn't burned tasted good though. I substituted plain yogurt for the buttermilk and added 1/4 cup of honey. Next time I'll just try 20 minutes. Otherwise not bad!

Banana Nut and Ginger Bread

Really moist and delicious. The cardamom is overpowering though. I think next time I would just leave it out altogether and add more ginger instead. I'm not a fan of walnuts & raisins in my banana bread but I added them anyway and they're pretty good in there!

I'm always looking for uses for super-soft bananas, and these muffins are a great way to use them up. I had lots of bananas so I made a double batch and they are so delicious! Really simple and good with raspberry jam.

Irresistible Irish Soda Bread

I've never had soda bread so I had no idea what it was supposed to taste like. I didn't want it to be sweet so I omitted the sugar. Followed everything else exactly and it was delicious, basically like a biscuit in loaf form. And it was really easy, all ingredients most people have stocked in their kitchens at all times except maybe for the buttermilk. I'll definitely make this again.

Coconut-Cream Cheese Frosting

Awesome. The only thing I would change is when I added the 1/2 cup of coconut to the frosting it didn't seem like enough (but then again I really love coconut)so I put in 2 whole cups of it. I kept everything else the same, and it was enough to put a nice thick layer on a 9x13 chocolate cake & still had a few spoonfuls left so I could lick the bowl :) I would use this frosting on any cake!

Chocolate Sauerkraut Cake II

I had to try this because I love sauerkraut and the thought of putting it in a cake just tickled me. I was saddled with the task of making a cake for a going-away party for a co-worker, and thought I would make this as a revenge of sorts. I very roughly chopped the sauerkraut because I was going to put coconut frosting on the cake anyway and figured that if anyone got some stringy bits they would just think it was coconut. Nobody suspected anything. I got nothing but rave reviews. Even when I got a piece of what I knew was sauerkraut and bit into it, all I could taste was chocolate. This cake is so delicious and chocolatey. I recommend it to anyone who wants to try something different!

Banana Banana Bread

Really really good. Super moist. I added cinnamon, ginger & nutmeg (about 1/2 tsp of each). I will never ever throw away "bad" bananas again because I can just use them to make this terrific bread!

Slow Cooker Marmalade Curry Chicken

This was FANTASTIC. I added half a can of coconut milk and used curry paste instead of powder, then served it on top of some basmati rice that I cooked with the remaining coconut milk & chicken broth I had left from cooking the chicken. It's got some great flavors, sweet & spicy with just a touch of heat. I'm adding this to my favorite slow cooker recipes!
