Turkey Bagel Dogs

Beer Braised Irish Stew and Colcannon

I was so happy with how this stew turned out. The only changes I made were to use pre-cubed beef stew meat, Guinness instead of beer, and pre-crumbled bacon for the colcannon (I ran out of time and just so happened to have some in my refrigerator). The colcannon was just buttery enough and the cabbage was perfectly cooked. I always hand-mash my potatoes, so that's the only change I made to the methods. The stew had the perfect amount of liquid and the beef was so tender. The carrots didn't turn to mush, which I was concerned about. The overall flavor was excellent. My husband even loved it! I will definitely make this recipe in the future. In fact, I'm thinking about serving it to friends next time we have them over for dinner.

Cider Cheese Fondue

I'm going to give this one a middle of the road rating for now. Our fondue was a grainy mess that no amount of fiddling with could save. I'm not entirely sure it wasn't our cheese, though (there's not the greatest selection to be had in this town), so I'll probably try to procure excellent cheese and come back later to re-assess.

Orange Soy Pork Loin

I didn't get much orange flavor out of this, but the overall flavor of the pork was nice. I might add more juice next time, but that's my own personal preference. The pork cooked very well and looked very nice when it came out of the oven.

Quick and Almost-Professional Buttercream Icing

This is my first time attempting buttercream, so I decided to try this one since it is very straight forward. I was going for an orange flavor, so I substituted orange extract for vanilla. It is very tasty. I can't wait to frost my pumpkin spice cupcakes with it once they've cooled!

Peachy Moist Muffins

Our whole family loved these muffins. I made a batch last night and they were all gone by 10 AM this morning. They definitely live up to the name. They were very moist and fluffy and had a nice flavor. I had to make them in a convection toaster oven since our oven is on the fritz and they still turned out great. The pecans definitely went well with the peach and vanilla flavors. Kudos for a great recipe!

Autumn Squash

I am very picky about my squash and I absolutely loved this dish. It was so simple to make that even I, as a beginner, had no trouble making it. I'll definitely make this dish on a regular basis (as long as I can find the squash!).

Cranberry Sauce Chicken II

This dish was so good! I used boneless skinless chicken breast instead of thighs, as that's what I had on hand. That's the only alteration I made. The sauce made for such a great flavor in the chicken. I will definitely be adding this dish to my regular rotation.
