About this Cook
I've been an an avid cook and baker for several years, tweaking recipes to perfection and creating them from scratch. I'm a stay-at-home-mom cooking breakfast, lunch, and dinner daily for my husband and 2 children.
My favorite things to cook
Hearty meat and potato meals that always bring smiles and full tummies to my family. I also cook up a big farm breskfast once per week with all the trappings! Baking nutrient rich cookies and decorating all-natural cakes are my forte'.
My favorite family cooking traditions
I grew up in eastern Wisconsin where the traditional recipes included Cool Whip, margarine, bratwurst, beer, and loads of cheese. For my own family, I have gone the direction of natural, healthy, hearty eating. I cook and bake from scratch almost every day using organic and all natural ingredients, including lots of fresh, local produce.
My cooking triumphs
Rice n' Beans. I decided to give the budget-friendly recipe a try after receiving several "You've NEVER had rice n' beans?! It's sooo delicious!" comments from Southern friends. It lived up to it's hype and now I make the dish a few times per month. I use the following Red Beans and Rice recipe sans the ham: http://www.gumbopages.com/food/red-beans.html
My cooking tragedies
Bread Machine Bread. I have never been able to make a decent loaf of bread with my bread machine and I can't figure out why!

Homesteader Cornbread
Excellent recipe! Very moist. Used honey instead of sugar, otherwise kept everything else as written. Baked in muffin pan for 27 minutes, until muffin tops were golden brown.

Breakfast Casserole
Wonderful! I made this recipe as directed, and took a tip from another reviewer and rinsed the pork in hot water to remove the grease. I added frozen spinach (chopped in the food processor) to the egg mixture. It floated to the top and baked really nice and crip on top of the casserole. Looked delicious and tasted better than any egg casserole I've ever made!

Creamed Chicken for Biscuits
Excellent! I made this into a casserole by baking biscuits on top (baked the creamed chicken in the oven at 350 for 20 mins until bubbly, then dropped balls of biscuit dough on top and baked for another 15 mins). I had whole milk on hand, so I substituted it for heavy cream. I doubled the garlic powder and black pepper and added basil and a few dashes of cayenne pepper for flavor (no spiciness could be detected). I used a peas/carrot mix and added some corn. Totally fattening, but rave reviews from my family!
