Flourless Peanut Butter Cookies

Delicious. We do not care one way or another about things being gluten free and it was delicious nonetheless! I made exactly as the recipe stated - yum, yum, yum! However, I will say that I doubled the recipe and easily made 40 average-ish cookies - I used a little cookie dough scoop.

Slow Cooker Chicken and Dumplings

This was a huge hit with the family and the ONLY things I changed were to use only one large can of biscuits (2nd can I baked up to go along with!) in the pot and add seasonings to our families' taste. If my kids were bigger I would have left the chicken large but they are all young so when the chicken was pretty well cooked I popped it out, cubed it up, and dumped it back in there. Simple and a slam dunk - my husband said it was "better than Cracker Barrell's!"

Rempel Family Meatloaf

Delicious and simple! Tripled the recipe to take as dinner for our small group time at church and the pan was wiped clean - most of the men had three platefuls and couldn't get enough of this moist, cheesy, flavorful goodness :-)

Perfect Apple Pie

Excellent! Made just as it (but used my own crust recipe) - times were great and I used freshly picked red apples from a nearby orchard... I can definitely see how Granny Smith's would be way too tart, so just use red or a blend. YUMMY!!!!

Banana Prune Muffins

SO good and SO simple. Definitely dredged your chopped prunes in flour to prevent sinking - I did and it was nice to have the prunes evenly distributed for eating :-) Kids devoured these as well. YUM!

Pan-Seared Tilapia

Super simple, super fast and super yummy! Had a half dozen tilapia fillets and about 10 minutes to cook them up and this was just incredibly easy and yielded a slightly crisp outside. Kids loved it!

Chocolate Pecan Pie III

This pie is AMAZING. Only alteration is to add a teaspoon of cinnamon to the stove top ingredients - have made it several times for family and all agree that it really results in a richer chocolate taste.

Baked French Toast

This recipe got 5 stars from my family, but I'm rating it a 4 because the recipe itself is off pretty dramatically. I read a couple dozen reviews and followed Jgordon (Jan 1st)'s suggestions and it turned out fluffy, delicious and NOT soggy.

No Bake Cookies III

It's hard for me to review these cookies, because I am just flat-out not a fan of "no bakes". HOWEVER, my husband loves them and I had lost my recipe and he said these were even better than my old recipe, so I will give them a FIVE! I can't keep them in the house for more than a day :-)

Artichoke Spinach Lasagna

Super tasty - the flavors burst out of this lasagna and it was very, very simple to make. I added shredded chicken (which I had boiled down from two breasts). Everyone enjoyed it, even the toddlers. I'm not sure how/why everyone else's ended up watery. Just make sure to really squeeze the spinach - the lasagna was saucy but NOT watery at all.

Mexican Chicken Corn Chowder

VERY good - a solid 4 stars. Made exactly as specified except that I added a few heart dashes of Adobo seasoning as everything stewed. Will definitely be added to the fall/winter soup rotation.
