Cherry Almond Biscotti
Made these biscotti today. They were flavorful, but the baking temperature 375 degrees, is too high. The ends of the loaves and the edges were very brown, nearly burned. Next time I'll bake the biscotti the way I've baked other biscotti recipes. Bake loaves at 350 for 30 minutes. Cool on rack for 10 minutes then cut into 1/2 inch slices with sharp knife. Place cut biscotti on the baking sheet and return to hot oven for another 15 minutes. Turn biscotti over. Turn off oven and place biscotti back into the oven until golden brown.

Irish Soda Bread
Best Soda Bread Ever! Bread was moist and tender. Used only 2 cups raisins which were plenty. Even though I forgot to put on the timer and the bread probably baked 15 minutes too long, the bread was moist and delicious. It is now my go to recipe for soda bread...and for raisin bread. No leftover to try it as French Toast.

Green Chile Spinach Quiche
Excellent quiche. I needed something quick for an after concert dinner with friends. I used an 8 inch pan and made half the recipe. Since our friends do not eat chilies, I substituted fresh spinach, mushrooms, and onions sauted lightly in 2 Tablespoons of butter. The cottage cheese and baking powder have to be the secret ingredients that make this quiche like none other.
