Greek Spaghetti I

Reviewed: Nov. 30, 2008
Delicious! We had a few additions to the recipe, otherwise we followed it exactly. We added 1 1/2 fresh diced Roma Tomatoes, tons of garlic (as we are fiends), and 1/2 of an uncooked medium sized white onion to the cheese then added as directed. Next time we are going to add about 1/4 pound of mozzarella cheese and some green chilies. Defiantly a very flexible recipe as far as additions go.

Banana Crumb Muffins

Reviewed: Mar. 15, 2009
Really good muffins!! We live at around 7,000 ft so I added a handful of oats and about 2 Tbsp flour and they turned out just about perfect the first time around.

Three Cheese Baked Mashed Potatoes

Reviewed: Mar. 30, 2009
Superb! Extremely cheesy which my wife loves! It was super easy to make and came out wonderful. We added more garlic because we are garlic fiends but everything else stayed the same.

Southwestern Egg Rolls

Reviewed: May 2, 2009
Excellent!!! We follow the directions to a "T," but added green chillies and onion (sauteed them both). We also had twice the amount of Monterey (1 1/2 cup) and a 1/2 cup of cheddar (great with Mexican/ southwestern food). We also baked these and did it right out of rolling them (did not freeze), but we did think that freezing them would be good and deep frying would also be good for a change of scenery and for saving food and economic value.

Jalapeno Cheese Bread

Reviewed: Jun. 8, 2009
Excellent bread with two major downfalls. Not enough cheese and jalapeƱos. We like things very spicy though (we are from the southwest). We also are fiends for cheese, so that is also a little downfall. Other than that the bread was very tasty and rose perfectly as long as you mix it with WARM water not hot.

Strawberry Cinnamon Oatmeal Muffins

Reviewed: Aug. 9, 2009
These muffins are pretty straight forward and tasty! Easy to whip up when I've got some fruit I need to use before it goes bad. Like many of the other reviewers did, I added some Vanilla and next time I think I'll try using apple sauce instead of the olive oil. I find that I much prefer Raspberries to the Strawberries, but that just personal preferences. :)

Chicken Tortilla Soup I

Reviewed: Sep. 10, 2014
The recipe is a good base recipe, and with a few changes the soup itself is worth 5 stars. Like other reviewers, we added quite a bit more seasoning and used all broth (homemade) and no water. We also omitted the hominy, using corn instead and used roasted Anaheims instead of canned.

Apple-Stuffed Acorn Squash

Reviewed: Sep. 10, 2014
A very satisfying fall dish. Like most things, it's even better with bacon added.
