About this Cook
I am a stay at home mom to an 8 year old boy and 5 year old girl, so finding new things for them to eat AND like is challenging. I cook every night for my family, so sometimes I feel burned out from cooking, but I'd rather cook for them than eat fast food.

I love to bake, and I am always making homemade birthday cakes for friends and family every year.

Every Christmas my mother and I make candies.
My cooking triumphs
My mother asked me for a birthday cake with real buttercream frosting, not the kind with powdered sugar, so I made her a vanilla on vanilla cake and she loved it, so the next week for my fathers birthday I made him a peanut butter cake with chocolate buttercream, which was just as successful.
My cooking tragedies
One of the Christmas my mother and I were making our candies, 2005 I believe, I was boiling a pot of water and was removing it from the stove when I lost my grip and dropped it down the front of legs. I was burned vey badly but my childeren were safe because my body blocked them from the water. My son was on the counter dipping chocolate amd my daughter was behind me. It scared me out of the kitchen for a while, but nowadays I don't let it hinder my passion for cooking. Remember everyone to take extra caution when cooking with children.

General Tsao's Chicken II
Delicious. I followed the recipes with only a few differences. Couldn't find a good price on thighs so I used breasts. Didn't want to buy peanut and sesame oil for one recipe, I didn't miss it. I loved it and so did the family, but next time I will cut open some of the chilis and add more, it just wasn't spicy enough for our hot mouths. I want more orange flavor, but my husband doesn't. So until he makes this himself, I will add more orange peel. I will use less soy sauce also, I think it hide some of the other flavors. Good recipe, thanks.

Dessertlover's Classic Caramel Sauce
I tried it twice and didn't even get to the part when you add the cream. Both times I cooked it for 10 minutes and the sugar, water, butter mixture crystallized (even though I used a wet pastry brush to rinse down the sides.) and never changed to a golden brown color. I don't know if the region I live in has anything to do with it (Reno, NV--5,500 ft w/practically no humidity) if anyone has tips I would appreciate them.

Cheeseburger Buns
This is the same recipe from the 2004 Taste of Home Cookbook. Nancy, thank you so much for this recipe. I am glad I can finally tell you how I appreciate it. We had the same thing in church camp but back then we called them ZOMBIES, I don't know why. When I shared this recipe with my sister she was so happy, it has brought back fond memories for the two of us. Now my children make them with me. We have also tried it with chicken, green chili and jack cheese.
