About this Cook
I'm married with 3 adult daughters and 1 adult old son. I have a great but time consuming job, a wonderful husband, 2 great dog and 2 great cats.
My favorite things to cook
I love to cook anything but I love trying new and different stuff.
My favorite family cooking traditions
Big meals, my daughters come over and all of us cook together in my kitchen.
My cooking triumphs
I learned to make an african chicken dish that was awsome! I also learned to bake bread by scratch.
My cooking tragedies
Brown and serve rolls, and I set off the smoke alarm when I heat taco shells, go figure!

Spicy Avocado Chicken
I am confused as the photo looks to have bacon but none called for in the recipe. I am not sure the recipe and the photo go together as the photo shows sliced avocado and the recipe calls for diced. I agree there is way to much onion for the amount of avocado called for so I used way less of the onion and still, not impressed.

Baked Potato
Thank you! Some people really need to have an idea how to do the basic stuff, not everyone has someone to teach them how. It might seem as easy as the post that compared it to eating an apple said but not everyone knows how to cook everything and needs a little guidance! It would have been nice if the size of the potato was clear, different size=different cooking times. I will say I do prefer to rub mine with olive oil as my family eats the skins.

Blackened Tuna Steaks with Mango Salsa
I made this recipe with only 2 changes. I omitted the bell pepper in the salsa and broiled the fish instead of pan frying. This was a great meal and will be a regular in my house. I served it with sliced kiwi, apricots and green and wax beans. Beautiful looking plate with all the flavor I was looking for. It is VERY spicy but thats what we like.
