About this Cook
Moved from the city to the suburbs to the country. Now that I am in the country I enjoy life more. I am a stay at home mom of a 8 year old boy. I can not work because I have a digestive disease call Crohn's Disease so my diet is weird. We raise our own beef for ourselves and family only. We have been in the country for 12 years and it keeps getting better.
My favorite things to cook
I like to try to make the foods I grew up with, the home made Italian recipes my grandmother and mother made. I also try new things and make my husband be the taste tester. Of course he has no clue. LOL.

My cooking triumphs
Home made pizza, scotta (like a calzone), italian sausage and spinach soup, there are more. But this is a time when I am on the spot and can't remember a thing.
My cooking tragedies
I am scared to make a cheesecake since my mom is the queen of making cheesecakes and is the "Soup Nazi". LOL

Fluffy Pancakes
My family loved these pancakes. The only thing I did different was that I added vanilla or almond extract for extra flavor. These pancakes were a hit in my house and I will NEVER buy another box mix again.

Chewy Peanut Butter Chocolate Chip Cookies
These cookies are almost perfect. And that is what I look for in a cookie. Personally I like the HINT of peanut butter flavor. My variation was to add almond slivers and used mini morsels. Unfortunately I also spooned out the batter rather than follow the directions. And I wish I did because they came out so small. That when the first batch was done my husband went half way threw the first dozen. But next time I will know better. My son ate and hummed with tasteful pleasure threw his three cookies. He said that they are "the best cookies in the world!" Point made. And to add, I have also substituted the chocolate chips for peanut butter chips. Which makes an amazing cookie as well. This is the best cookie recipe. My husband and son ate my first attempt at this recipe in three days.
