Savory Corn Muffins

Reviewed: May 29, 2011
Baked up moist & looked great! BUT...I am sorry I didn't listen to other reviewers and reduce the salt even more! I used 1 teaspoon & sadly,we couldn't eat them, just waaay too salty! I will give this recipe another try, but next time I won't add any salt, and depend on the salt in the butter & cream corn I guess! I could not believe how salty this recipe came out!

Strawberry Orange Rhubarb Cake

Reviewed: May 24, 2009
Very Good! I mixed the orange zest in with the strawberry/rhubarb mixture instead of the batter. It baked up perfectly! I will definately make again! Great served with a dallop of French Vanilla Coolwhip! Thanks for sharing---Cathy H.!

Quick Italian Vegetable Soup

Reviewed: Jun. 27, 2008
WONDERFUL SOUP! I used a little more of the suggested vegetables and even added a yellow crookneck squash. To serve the leftovers I added pre-cooked pasta just before serving and it was great too! Thanks for sharing an easy-tasty soup recipe!

Quick and Easy Brownies

Reviewed: Jun. 23, 2008
EXCELLENT! I heaped the half-cup cocoa powder, added 3/4 cup semi-sweet chocolate chips instead of nuts, & was careful not to overbake. This recipe is a KEEPER!

Pecan Turtle Bars

Reviewed: Jan. 6, 2007
I took Erin's advice in an earlier review and increased the flour to 2 cups and used 1.5 cups each of pecan halves and chocolate chips. WOW! They are GREAT! Thanks Maryln & Erin...this one's a keeper!

German Chocolate Thumbprint Cookies

Reviewed: Jan. 6, 2007
GREAT TASTING! I added 1/2 cup flour (as others suggested) otherwise followed recipe exactly. They still flattened out a little more than I was hoping, so next time I will up the flour a little more. When the cookies cooled I drizzled the tops with melted chocolate chips that I put in a little zip-lock bag that I snipped the corner of. It made them look GREAT...everyone loved them! P.S. I've also tried them with a Devils Food Cake Mix & they were wonderful! Thanks for a keeper!

Apple Betty

Reviewed: Nov. 22, 2006
Another reviewer was right...presentation is lacking for this recipe. The topping disappears into the apples and actually gets soggy if you don't serve it while warm from the oven. It tastes good with vanilla ice cream but is too "gooey" for my tastes if it sits at all. Sorry, but I've made this twice...so I think I've given it a good try.

Microwave Oven Peanut Brittle

Reviewed: Sep. 13, 2006
EXCELLENT! EASY! EXACTLY what I was looking for! Even though the peanuts hadn't "browned" after the first 6 minutes I went ahead and stirred in the butter and vanilla & cooked 3 more minutes...added the soda and poured on the sheet. It came out a perfect caramel color and was perfectly hard-crack! Thanks for a great recipe I will make again and again! :o)

Summer Squash Casserole with Nuts

Reviewed: Sep. 10, 2006
EXCELLENT! I steamed 5 cups zucchini & yellow crookneck that I quartered and sliced about 1/4" thick, for about 8 minutes (almost tender). I saute'd the green pepper and onion in 1/4 cup butter until about half cooked. I used two eggs, 1 tsp. sugar, 1 cup grated sharp cheddar same mayo as recipe calls for. I mixed 1/2 c Ritz cracker crumbs with 1 T. melted butter for the topping. Other than that I followed the recipe---:o) Everyone loved it! I think red bell pepper instead of the green pepper would be great in this also!

Zuppa Toscana

Reviewed: Jul. 31, 2006
I use bulk Italian Turkey Sausage & saute' it with the onions & bacon, being careful not to let it brown. Then I added the remaining ingredients except for the cream and let it simmer for 15 minutes...added the cream & served. Great flavor! We like it better than OG's! :o) Thanks for sharing!

Gnocchi I

Reviewed: Jul. 31, 2006
Great Recipe! Simple and complete! The trick I found helped me was to work in enough flour so that the dough hardly "moves" when you stop kneading for a second. Once that was accomplished I rolled it into 1/2 to 3/4 inch ropes, chopped in one inch chunks, rolled it down the tines of a floured fork and boiled them in salted water 'til they floated for a minute or two! Great with Alfredo Sauce & grilled chicken or your favorite Spaghetti sauce! Thanks for sharing your recipe!

Bran Flax Muffins

Reviewed: May 22, 2006
GREAT MUFFINS!!! What a tasty way to get oat bran, flax, fruit & carrots into your diet! I didn't add nuts, used half the cinnamon, grated the apple with the peel, chopped the raisins, used half splenda & half honey for the brown sugar, made them with paper liners and got 24 muffins! Just took 18 minutes to bake and turned out moist and full of flavor! This one goes right into the recipe box! Thanks for sharing Jane!

Apple Sheet Cake

Reviewed: Jan. 12, 2006
Wonderful Recipe! Like an apple tart with wonderful 'crust'! I rolled the dough out between two sheets of waxed paper and it took some effort but will fit the recommended pan! I halved the "frosting" and made a thin glaze for the top. This "cake" got rave reviews from my family and our dinner guest! Definately a keeper!

Apple Shortbread Pie

Reviewed: Sep. 11, 2003
WONDERFUL!!! This could also be called "Peach Shortbread Pie". I made this recipe with about 2 pounds of peaches in a round stoneware pan. I added one-fourth cup more brown sugar and it was superb. My daughter said "why make pie when you can make this"! We all loved it. I baked it for 50 minutes uncovered. This is definately a keeper!

Banana Cake VI

Reviewed: Mar. 30, 2003
OUTSTANDING Banana Cake! So moist and full of flavor! I made the cake just like the recipe except used a half cup less sugar. For the frosting I used half the amounts of butter & cream cheese and added a tiny bit of milk. EVERYONE that tasted this cake loved it! OH, and I didn't put it in the freezer and it was still VERY moist! Thanks Cindy, for a great banana cake...definately a keeper!

EXCELLENT Cookie Bars!!! I doubled the recipe using raspberry jam instead of jelly and baked them in a 9 x 13 pan for about 45-50 minutes. They turned out perfect! Golden brown, just the right sweetness and very tasty! This is a keeper! Thanks so much Holly :o)

Cinnamon Cookies II

Reviewed: Oct. 4, 2002
WONDERFUL Recipe!!! These cookies are delightful! I added a tiny bit more flour (after the first sheet baked) so they wouldn't spread as thin. They have a light buttery-cinnamon taste and are tender-crisp-chewy. Everyone loved them. THANKS! I'll make these often.

Tofu Chocolate Pudding

Reviewed: May 3, 2002
Wonderful recipe! I added 3 tsp. Splenda (sugar would work too) to make it just a little sweeter. I topped each serving with whipped cream, mini chocolate chips and a few frozen raspberries. It was a hit for dessert & so easy with the food processor. I will make this often! Thanks Deda! :o)
