Slow-Cooked Chili

Reviewed: Sep. 18, 2008
Great...with the addition of 4 oz can of diced green chilis, 1 tsp red pepper flakes, 1 tsp smokey tabasco sauce to chili. Also, 1 tsp paprika, 2 tsp cumin and 1 1/2 tsp garlic salt to meat. I did 1 lb. of ground turkey instead of 2 lbs ground beef. Served with cheesy cornbread muffins and a dollop of light sour cream.

Frosty Pumpkin Pie

Reviewed: Nov. 22, 2008
I used a graham cracker crust, did a layer of the ice cream mixture, topped with crushed gingerbread snaps, topped with a second layer of ice cream mixture. Garnished with caramel ice cream topping, crushed pecans and whipped cream dollops, yum!

Frank's Spicy Alabama Onion Beer Chili

Reviewed: Dec. 3, 2009
I make all kinds of chili and this was fabulous! Of course I had to health it up and make it my own with the following tweaks. 1 pound ground turkey instead of 2 pounds ground chuck, 1 large white onion instead of two, one green bell pepper diced, 4 celery stalks diced, one McCormick low sodium chili seasoning packet, 2 jalapenos diced WITH seeds instead of 4 seeded, 3 chipotle peppers in adobo sauce from a can diced. Omit the tabasco, chili powder and red pepper flakes...the chipotle and jalapenos with seeds add plenty of heat. Also a couple of drops of liquid heat. Keep the beer, worcestershire sauce, 2 cans of spicy chili beans, 2 cans of diced tom, 2 cans tom sauce. Serve with cornbread, top with fresh cilantro, green onion, sour cream and cheese. Amazing!

My Crab Cakes

Reviewed: Jan. 2, 2010
Thank you for this recipe, it is wonderful! I love to cook, but for some reason I always thought crab cakes were something I wouldn't be able to do right at home, thus they were always something I would order if we went out to eat. Now I don't have to order crab cakes out anymore! These are some of the best crab cakes I've had, hands down. We had them on New Year's Eve and they were fabulous. I served them with a lemon wedge and spicy mayo (siracha mixed with mayo, yum)!
