To Die For Blueberry Muffins

This recipe has been a family staple for years. Outstanding! The only change: DOUBLE IT! One batch is never enough! And you can get by with less sugar than called for - they're plenty sweet (and decadent) with even 2/3 of the sugar recommended.

Banana Crumb Muffins

We've been making these for years, and my entire family loves them! The only thing we do to this recipe is 1) double it!, and 2) sometimes add walnuts.

Chicken Cheese Chowder

This turned out great! And - to be fair - I *almost* completely stuck to the original recipe! My only alterations were to 1) add a tsp or two of garlic, 2) add a cup or so of frozen corn kernels, and 3) omit the chicken, as I was putting chicken in the accompanying salad! 4 out of 5 in my family really liked it, with the exception being my 11yr old son whose religion prohibits him from eating vegetables ;^) Even my wife, not really a soup person, enjoyed it, and my 16yr old son had four bowls! The processed cheese really makes it creamy (at the expense of your health, but...). Great stuff!

Classic Lasagna

'twas delish! I made a few adjustments: used 1 lb ground turkey instead of ground beef; about 2 tsp fresh garlic (I love garlic!) instead of garlic salt; 2 cans diced tomatoes to replace 2 of the cans of tomato sauce; cottage cheese instead of ricotta; one chopped onion cooked up with turkey/sausage; baked covered with alum foil for first hour, uncovered for last 30 min. Even my VERY finicky children enjoyed it, albeit they all complained about the mushrooms. Was very flavorful, tender, moist, and tasty!

Glazed Meatloaf II

Muey delicioso! Of course, I didn't follow it to the absolute letter... I like flavor baked in, so I added some catsup, BBQ, Worcestershire, hot pepper sauce, and garlic to the beef before mashing. I also - as someone else mentioned - like to use "good" (Kirkland Honey Wheat & Walnut - yum!) bread, even though my kids complain about it. Adds nice texture and good flavor! And I use some BBQ to replace the catsup in the sauce, as I think it tastes better that way. It comes out very moist, and the flavor was so good that you didn't even need to add extra catsup or BBQ - though my children do, anyway...

Swedish Apple Pie

Outstanding recipe! We've made this many times, and it's a hit with my family - and extended family - every time. It also lends itself well to adaptation. I like to pre-cook the apples (with some cinnamon-sugar and a little water) to soften them. Last time I made this I essentially doubled the apples (but they cook down some), and then did about 1 1/2 times the topping. This then fit nicely into a standard 12x9 baking pan. My sister's family loved my "apple crisp!"

Blue Cheese Ball

This was a great base from which to start! I had feta cheese instead of blue cheese, so substituted that. I also added a dollop of sour cream and a few dashes of cayenne pepper to "hop" it up a bit. Turned out delicious! I'm impatient when making a cheese ball, so I don't wait overnight to finish it. You'll get a bit messy, but it's OK to form your cheese ball when it's soft and sticky and roll it in the walnuts. Then you can start eating it earlier!
