Grandma Elaine's Unstuffed Sweet and Sour Cabbage

Really amazing and easy to make - takes awhile but most of the time is spent simmering in the pot. Reminds me of the cabbage rolls I grew up with!

Italian Spaghetti Sauce with Meatballs

All the reviewers are correct - what a great recipe! Sauce was amazing and the meatballs were moist and delicious (not only in the sauce but also in meatball subs the next day). I used 28oz peeled whole and 28oz Italian diced tomatoes, added 1/2 chopped green pepper to the onions. After an hour cooking, I added 1/4tsp red pepper flakes. After 90 min. I also added some Italian seasoning, onion powder, oregano, and garlic powder, some Pinot Noir and 2 Dorot cubes of frozen basil. In the meatballs I was a bit under one pound of ground beef and added 1.5 mild Italian sausage in meat mixture. Really tasted amazing! This will be a staple in my household!

These were really good and a great way to use up any leftover ricotta from lasagna. I made a 4-serving version, using 3/4 cup of ricotta, 1/8 cup Egg Beaters, 1.5 tsp sugar, 1/2 tsp vanilla, 1.25 tsp baking powder, and 1/4 cup flour. I also used a medium sized cookie scoop to ensure they were all uniform and would cook evenly. They were delicious right out of the oil. However I cooked them the night before, stored them in an airtight container wrapped in paper towels and then baked them until hot the next day. Tasted perfect! Tasted like little donut holes!

Creamy Blueberry Pie

Just as the reviewers have stated - this was delicious! I did add just a squeeze of lemon to the blueberies (used 3 1/2 cups), reduced filling sugar to 3/4 cup, added 1 tsp vanilla and 1/4 tsp cinnamon to filling, and for topping did 1/4 cup brown and 1/4 cup white sugar with 1 tsp of cinnamon. Took about 65 minutes to brown up nicely at 350 degrees. So delicious with vanilla ice cream.

Thai Cucumber Salad

This was a really nice cool side dish for an asian entree. Very light and tangy. I used English cucumbers and sliced them very, very thin which I prefer. I found that there was a lot of liquid left over after the cucumbers had been served, so I think I could have probably used another cucumber. Really good - try it.

Whit's Chicken Enchiladas

This was excellent - Consider it 4 stars as is and 5 stars with the additions I made based on reviewers - added red enchilada sauce on the top and bottom of pan. Topped all with sliced black olives. Boiled 3 boneless chicken breasts and shredded meat. Included 1/2 packet of taco seasoning to meat/cheese mixture. Also sauteed 1/4 cup red bell pepper and 1/4 cup onion with chilis, garlic and jalapeno. Excellent with spanish rice and refried beans. A keeper

Spinach Lasagna III

I used raw spinach (9 cups) and didn't boil it and used way more sauce and mushrooms than called for, as other reviewers suggested. I also sprinkled Italian seasoning on each layer. It turned out really tasty. I didn't let it sit before I served it so it wasn't set at all and fell apart unfortunately. I ended up using 9 lasagna noodles - I made two thick filling layers. Really yummy - will make again.

Mulligatawny Soup I

This was phenomenal and received a high score from my boyfriend! I made it so it was more thick and stew-like was so warm and comforting. While soup was cooking, the broth tasted way to spicy, but mellowed out a bit as time passed. However, it was super spicy and delicious. I made some adjustments based on other postings. For 12 servings: - Sauteed veggies with 2 cloves of garlic - Switched out butter with 1/4 cup olive oil - Used 3 Tbsp Sherwoods brand curry powder - Used 9 cups chicken broth - Added 1/4 tsp cayenne pepper - Added 1 peeled, cubed yellow potato to apples - Used 1 cup brown basmati - Used 3 chicken breasts - Used 1 cup light coconut milk I also used an immersion blender at the for a few seconds to make it that much more creamy. Notes for next time: Was extremely thick - reduce rice to 3/4 cup and consider 2 1/2 chicken breats. Perhaps reduce curry to 2 1/2 Tbsp. Rice took much longer than 15 minutes (took 35-40 minutes). Next time I will add rice when I add the broth. I served with a warm sourdough baguette - truly amazing. A favorite recipe. A must try
