Extreme Banana Nut Bread 'EBNB'
WOW!! Really REALLY really BIG hit at my house. Between my 11 yr old son and I, we finished one loaf within the sm hour it came out of the oven! Perfect recipe! I did take advice of reviewers and added another half tsp baking soda. Since I didn't have two full sticks of butter, I used one and 3/4 sticks and about 3/4 cup of applesauce that I had on hand. Also used half/half white and brown sugar, a tsp of cinnamon and vanilla. Except for the fact that I (used bigger loaf pans than recipe called for) over baked them to a very browned crisp, we still can't stop eatting it up! Wonderful banana bread recipe! Running back to the store now for more butter so I can get it right.

Minestrone Soup I
Great flavor! I substituted ketchup for tomatoe paste, used lt red kidney instead of cannellini, added zucchini and spinach, left out the celery (only cause husband doesn't like it), used fresh parsley, a bay leaf, and Italian Seasoning. I like lemon pepper so I used plenty, and the short macaroni instead of elbow. My 10 yr old son whose usually pretty picky, loved it. His only request was more potatoes and beans next time. I was just happy he ate healthy!

Southern Peach Cobbler
Easy and delicious recipe! Although leave it to me to screw it up. I picked up the wrong (salty) butter so I had to use the spread I had on hand. Since I used fresh peaches (6) I should've tossed more sugar into them but they just seemed sweet enough naturally. Once cooked, their natural sweetness was mostly gone. The cakey crust around the peaches would have been perfect except I believe the spread had something to do with the soggy center. I used a 2 qt deep glass dish, which was a perfect fit for the 6 peaches but 5 would've worked too. Another important note I'll add is that it's definitely better eatten once cooled; more solid, more sweet, more syruppy, more yummy. Determined to get it right, gonna try again tommorow, also might try adding cherries to the mix.
