Greek Penne and Chicken

This is a great base recipe that can be modified according to what you have on hand. I didn't have all the ingredients so I modified it. First I used lingunie pasta instead of penne. I cooked my chicken breast in the oil from the marinated artichoke hearts and seasoned it with garlic-paprika seasoning. When the chicken was cooked I removed it from the pan and added garlic to saute for about 4 minutes. Then I put the chopped chicken and artichoke hearts in the pan. I added a half cup of white wine and let it reduce. Once reduced (about 8 minutes on med-high) I added a half can of whole black olives and 2 T of capers. I also added 1 T of balsamic vinegar, a dash of chicken bouillon, and 1 T of lemon juice from plastic lemon for flavor. So basically I didn't use butter, onion, tomatoes, feta cheese, or parsley and it still turned out great! I know I made a lot of modifications, but that's what makes this an awesome recipe.. It's veratile! So, bon apetit!

Easy Batter Fruit Cobbler

Wow! This is so easy and Delicious! I added vanilla extract and apple pie spice to the batter. I used frozen mixed berries, defrosted. I put half the sugar in the batter and half with the berries. Couldn't have been easier! Thank you for an awesome recipe! A keeper for sure! *You could reduce the butter for health reasons, but its fine with the stated amount. Yum!

Graham Cookies

Yum! These were great! I halved the recipe, reduced sugar and peanut butter, added peppermint extract, and used chocolate grahams. They were sooo good! I boiled the chocolate mixture for about two minutes and they set just fine. A little on the sweet side, otherwise Deeeee-lish!!!

Cream of Potato Soup III

It was pretty good. I'd agree that it was a little bland. The changes I made were adding bacon and carrots. I cooked the carrots and onion in the bacon grease. I didn't really need the flour. My boyfriend would have liked it better chunky, but I liked the smooth consistency. I added more onion and replaced the dill with parsley. Oh! I put the parsley in with the boiling potatoes and when I pureed them, it turned kind of green! So be careful of that! All in all pretty good, but still a little bland. I'd still recommend it, just add your own personal touch!
