Barbie's Tuna Salad

This was really good... I doubled the recipe, used one can of fancy white tuna and one can of regular tuna (both in water). Great if you want a change from the plain old tuna with mayo & relish.

Loose Meat on a Bun, Restaurant Style

This sandwich was a great surprise! I'm not from the Midwest, and I'd never heard of loose meat sandwiches before. I was trying to use up some ground beef, and I wanted to make something easy but good. I ran across this recipe and had everything on hand. My hubby ate 3 and I could go for a second right now. If you're thinking about it, definitely give it a try.

Chicken Tortilla Soup V

This is some really great soup. The directions were a little vague, so I trimmed the chicken and cut it into chunks, then poached it in the chicken broth. When the chicken was cooked, I stirred in the rest of the ingredients and let it simmer for a few hours. I suppose you could also do that with whole breasts, take them out & shred them, then put them back in. I also substituted canned chickpeas for the corn. Will definitely make again :D

Chantal's New York Cheesecake

This really is such an awesome cheesecake recipe! It's a simply recipe with delicious results. I too used a water bath for my cheesecake... and I ran out of foil after only wrapping the pan once. In the end, a little water seeped in the pan, making my crust a little soggy in places (totally my fault) but even then, this cheesecake is GOOD!!! I also used cinnamon graham crackers for the crust which came out fabulous. Thanks for sharing!

German Chocolate Fudge

This fudge was absolutely awesome!!! I've only made fudge a few times and always with a microwave, never on the stove top. I followed the recipe exactly, letting the sugar boil for 6 minutes from a full boil. I read somewhere that stirring the sugar makes your fudge grainy, so I left the sugar alone the entire 6 minutes. The grocery was sold out of German chocolate, so I used milk chocolate instead and it was great. I think this recipe would work well with any chocolate substitute. This recipe was so simple... no candy thermometers, no ball stages... and it makes fudge that you could have bought in a candy shop. The two important things to remember: 1. Be prepared. Have everything set up and ready to go before you start cooking the sugar. 2. Your fudge is only as good as the ingredients. It's so simple that skimping on the ingredients (buying cheap chocolate) will really show through.

This recipe was awesome! I took it to work and it was gone in no time. It's almost like a chewy granola bar, but it has that layer of chocolate and caramel in the center. Definitely very rich!

Buckeye Balls II

These were great. I grew up along the Ohio-Kentucky border, so these are a staple around Christmas and Thanksgiving. I only used 3 cups of sugar (didn't sift it) and it was plenty... anymore and I would have had dry crumbs. Thanks for sharing!

Slow Cooker Chicken and Dumplings

I bought some precooked rotisserie chickens at the supermarket and was looking for a recipe to use them up in. This one fit the bill! I tore the chicken meat up, put it in the crock pot with the two cans of soup, butter, onion and 2 cans of chicken broth, then cooked it on high for a few hours. I doctored it up with some poultry seasoning, garlic powder, seasoned salt, etc... I would suggest adding seasoning to your own taste as it was a little bland on it's own. I do suggest sticking to the cream of chicken soup and if you want to have vegetables with the meal (I always do), cook them separately and serve them on the side. If you throw them in with the chicken they bloat up and steal all of the chicken flavor and liquid from the stew, which the biscuits need to become dumplings. Other wise you just have chicken and veggie casserole with a biscuit topping. Push the biscuit pieces into the stew so that only the top is uncovered... this lets soak up the liquid and get soft and "dumling-y". Recipe is definitely worth a try for an easy but delicious dinner.

Light Oat Bread

This is a really awesome recipe!!! It came out tender, moist and beautiful! It's great in a sandwich or just a piece on it's own with a little butter. I don't use a bread maker, so I mixed the dry ingredients together, the yeast with the water and 4 T honey instead of brown sugar for personal preference. I mixed the wet & dry, and since the dough was really wet, I just rounded it out with the spoon and left it in the bowl covered with a piece of plastic wrap to let it rise. An hour later I kneaded it about 4 minutes with 1/2 cup of flour on the board, put in it one bread pan and let it rise for another hour. I baked at 350 for about 25 minutes (we like our bread soft... it could be baked a little longer if you like it crispy). This is definitely a keeper!

The Best Lemon Bars

I always hate giving a recipe a low review, but I did not care for these at all. The crust had a good shortbread flavor but it was WAY too greasy. The filling was very, very sweet and hardly tasted like lemon at all. There was also more crust than filling, which seemed backward to me. I don't know if I'm just used to a different kind of lemon bar or what, but no one in the family ate more than one bite.

Awesome and healthy side dish! The recipe is perfect as written... just feel free to spice it up however you and your family likes it. We added in some addition veggies and feta cheese, which made it even better!

Tabbouleh I

When I left Michigan, the one thing I really missed was having all the Middle Eastern delis around. I really grew to love the food while I was there, and tabbouleh is one of my favorites. I made this salad and tasted a couple hour later and thought it didn't taste right. Luckily I made it a day ahead of time, and by the next day it tasted perfect! This recipe is great exactly as written!

Sweet Dinner Rolls

These rolls were great! I baked them in an 8" round pan so they would be super soft and tender. They *almost* remind me of Hawaiian sweet bread, but there's a little something missing. If anyone knows what it is, please let me know.

Marinated Turkey Breast

I got a turkey breast from my work for Thanksgiving and I wanted to do something interesting and flavorful instead of the same old boring bird. This recipe was great!!! The turkey still tastes like turkey, but with a great kick! Try it, you won't be disappointed.

Cake Balls

I actually just picked this recipe for some variety to add to my Christmas candy gifts, but it turned out to be one of the favorites. They were easy to make (even if they were a little messy) and fun to decorate. My four year old helped put on icing stripes, sprinkles, and candy buttons.
