Country Apple Dumplings

Okay, this could not be easier or more delicious! I didn't have mountain dew on hand but I used a can of sprite and it was just amazing. And I admit I forgot to peel the apples, but the skin was totally soft once baked. Otherwise I followed the directions exactly and even my pickiest daughter who swears she doesn't like apples had two helpings. I served the leftovers for breakfast the next day and they were fighting over the last one. Great recipe, it will be in my regular routine from now on!

Butterscotch Pumpkin Pudding Cake

I made this for a pot luck at work and it was A HIT!! I just frosted it with a can of ready made cream cheese frosting but before I did that, I sprinkled a few butterscotch chips on the top of the cake and let them melt into a sort of glaze as the cake cooled. It was so delicious, will definitely make it again!

Alex's Raw Chocolate Pudding

Just made this and it's fabulous! I am so glad I tried it! Even my kids loved it! I did leave out the lemon because I didn't have any in the fridge, but I followed it the rest of the way and it was just delicious! I saved a little for lunch tomorrow, hope it doesn't separate over night. Thanks for my new favorite treat!

Butternut Squash Cajun Fries

These were fabulous! So easy (once you cut up that squash!) and so tasty. My entire family ate gobbled them up - and I have a husband and daughter that swear they don't like squash! Thanks for the great recipe!

Quinoa and Black Beans

This was quick and easy and came out great. I did have to add some salt and pepper and just for fun I stirred in a little jarred salsa to make it seem more mexican. My family enjoyed it and we will make it again!

Very Easy Fruit Salad

The only fruit salad I ever make. It's so versatile and the pie filling makes it special. I add whatever fruit I have handy and sometimes I put vanilla pudding in the bottom of a glass and layer it with this salad for a special treat for my kids. They think it's the best thing EVER!

Yummy and simple. My kids love picking out the flavor of jello and they can almost make them all by themselves now. You have to have them in red and green at Christmas - they are perfect on your cookie tray!

Sopapilla Cheesecake Pie

Brought this to work for a birthday celebration and it was GONE in an hour. Everyone loved it and it was so easy to make, I will definitely do it again for the next office party. Dont' forget the honey, it's the best part!

Butterscotch Oatmeal

Without a doubt the best oatmeal you will ever eat. It's super easy and you cna adjust the sugar down if you want it less sweet. My kids who say they hate oatmeal will eat this right out of the pot. Plus it sticks to our ribs so you don't feel like you need a snack at 10AM. Enjoy!

Old-Fashioned Corn Relish

This was SO EASY and SO GOOD! I made 10 jars to take to our family reunion for our annual auction and before we got started I opened a jar and put it out with the dinner buffet. It was gone in a snap and then everyone was fighting over the remaining jars during the auction. The last one went for $20! That's how good this stuff is. Give it a try!

Pumpkin Chili

This is by far my favorite chili recipe. It is delicious and nobody knows there's pumpkin in it. It has a sweet dark rich taste and when it sits over night, it's even better!

Peachy Bread Pudding with Caramel Sauce

This turned out great! I stuck to the recipe except for using canned peaches and it was delicious. Tastes just like summer and the kids can help you make it by ripping up the bread and stiring the sauce. Great recipe!

Sweet Potato Bake

I made this to bring for Thanksgiving this year and it was fantastic. Didn't change a thing and even my kids and husband who insist they HATE sweet potatos had second helpings. Plus, since I made a double batch, I had some left over for lunch the next day and it was even better! Great recipe - thanks so much!

Two Ingredient Pumpkin Cake

I made this as muffins/cupcakes exactly as written, except used a devil's food cake mix because that's what I had on hand. I LOVED THEM - and so did my picky daughter who has a major sweet tooth. This makes a great healthier replacement for fatty cake recipes and I will make it over and over. This weekend I will go get a spice cake mix and see how that one turns out! UPDATE: I've now made it with spice cake mix and carrot cake mix and both are WONDERFUL! I do it in muffin tins and send them to school with my kids and to work to share. Everyone LOVES them.

Raisin Finger Sandwiches

Fabulous! I took this to a church social and a card game and both times it was a total hit! I also let the filling sit in the fridge over night (just by chance) and it came out perfect. I think it would also be great on pumpernickle bread too.

Chocolate Eclair Dessert

I make this recipe every summer for a family gathering and it's always the hit of the party. I also microwave the frosting and use only 1/2 as a glaze. Also, I mix it up and use the chocolate graham crackers sometimes, or if it's Thanksgiving I mix a can of pumpkin pie filling into the pudding and layer it between the cinnamin flavored graham crackers. Then put cream cheese "glaze" on top. You can't go wrong!

Sloppy Joes I

This is the way my Grandma always made her sloppy joes and they are by far THE BEST! The other versions tend to be heavy on the brown sugar and too sweet. I also add onion when I have it, but it's okay to leave it out too. We serve them with Fritos, baked beans and Sprite just like Grandma used to do. My kids LOVE them and when they have sloppy joes made from the canned sauce they say, "These are NOT real sloppy joes!" :)

Buttery Soft Pretzels

Don't worry if the dough seems really stiff. Mine was almost unworkable - but after it rose for an hour it was perfect. These are FABULOUS. And my two little girls loved helping me roll them into "snakes" - they were so proud when they came out of the oven and tasted how DELICIOUS they are. You will not be dissapointed! Thanks Christa!
