Jalapeno Garlic Tilapia Pasta

This dish was awesome! The only thing I did differently is that I didn't bother with dredging the tilapia in flour before frying, and I also made double (maybe triple) the sauce. It is ALL about the sauce. I agree with others that this may be better over rice, of even over linguini perhaps. I don't think penne is a good match. I will definitely keep this in my line-up and will also try it with shrimp and chicken.

Chimichurri Sauce for Steaks

So delicious. I use to live in Miami, so I know how authentic chimichurri should taste. I've tried a couple other recipes that fell short. This one is it!

Caribbean Coconut Chicken

This was a hit. My modifications are: use the whole can of coconut milk, only use one onion and one red bell pepper. I cook the chicken to just about done, remove, and then sautee the pepper onion and garlic in the chicken juices. I then cut up the chicken, and then add it back to the skillet with the coconut milk. Only bake in the oven for 10-15 min. I do this all in one big iron skillet so that I don't have to transfer to a casserole dish. Yummy yummy to my tummy. (serve over rice with salad.)

Me and my husband loved it. I too added breadcrumbs to help with the binding. I also added red pepper flakes for kick. Delicious!

Mother-in-Law's Chops

This was very delicious. My husband really liked it. Based on other reviews, I made more of the sauce and also used tomato sauce with the ketchup. I used 1/2 cup of ketchup and 1/2 cup of tomato sauce. I doubled the rest of the ingredients. Baked it covered, and when done, threw it over white rice with salad. Very easy meal.
