I admit that I have used hundreds of online recipes, both here at allrecipes as well as others, but never have I felt so strongly about the outcome to feel an absolute NEED to comment. As some have suggested, I too added garlic to the onions in the cavity and ended up marinating 24+ hours. I only eat white meat, which as everyone knows, can often be quite dry. This however is, BY FAR, the BEST chicken EVER! It turned out so incredibly moist and flavorful-even the breast, that I will NEVER roast a chicken ANY other way! As I write this, I am having the leftovers from last night's dinner and am getting a little sad now that it is almost gone... LOL Thanks for posting - it's a KEEPER!!!!
