Chicken Gruyere with Sauteed Mushrooms

Really good. I also added some extra spices to the breading, but otherwise followed the recipe. It was a nice dish and easy to make.

Eggplant Croquettes

These were really good and a different way to have eggplant. I served them as a sidedish with a thrown-together sauce of diced tomatoes, roasted red pepper, crushed red pepper flakes, garlic and oregano.

Hot or Cold Vegetable Frittata

Based on other reviews, I added some extra spices to get a bit more flavor. I made them for a work meeting and cooked individual frittatas in muffin pans. They got compliments from everyone and no leftovers!

Excellent and Healthy Cornbread

I've made this a couple of times now and I like it a lot. Nothing special, just good cornbread. To make it even healthier, egg beaters work well as a substitute for eggs. To add a little kick I mixed in part of a can of diced tomatoes with chilis (this was really good).

Stuffed Cabbage Rolls

These were ok, pretty bland though. I had added garlic powder, brown sugar and lemon juice....seems like it could use a little kick. I boiled the whole head of cabbage for about 8-10 minutes, then stuffed the leaves and cooked in the oven. They kept form pretty good, but the taste wasn't quite there.

Old-Fashioned Potato Pancakes

Great recipe for potato pancakes, I kept the parsley in and I'm glad I did. I also added a small bit of shredded cheddar cheese and I topped with green onions and sour cream. These were great as a side dish for pork chops.

Creole Okra

Thanks for the recipe. I didn't have quite the amount of okra called for, so mine ended up with a higher tomato ratio...seems like it would be good either way.

Almost No Fat Banana Bread

I'll be making this again since the first loaf disappeared so fast! No one could even guess that this was low fat. I followed the advice of others and added a bit of salt and about a tsp of vanilla, alos upped the cinamon to a full tsp. Next time I will definately add walnuts though.

I added a little extra bacon and did a second vegetarian version using fake bacon (Morningstar Farms), Since the vegetarian version did not accumulate the bacon drippings, I added olive oil to make up for it. They both turned out great! Careful though if you plan to add extra red pepper flakes...ours tended to be a little too hot, probably would've been better to stick to recipe recommendations on this part, you can always add more later.

Baked Stuffed Winter Squash

Great recipe, although we left out the raisins. This was part of a meal to feed two vegetarians and two meat-eaters. We substituted Tofurky Italian (fake) Sausage for half the recipe and used sweet Italian sausage for the other half. It worked out great and was delicious!
