Buche de Noel

Reviewed: Dec. 27, 2010
This recipe was fairly easy -- BUT -- I used my kitchenaid mixer on high to beat the egg yolks (5mins) & then the egg whites (3+mins), individually of course. It was simple to put it all together just sooo time consuming. Beat the eggs forever, (i only have one mixing bowl - so transfer yolk mixture, wash & beat egg whites, fold mixture together carefully to not lose any air, bake, roll, cool, fill, cool, frost, cool - refrigerate... It was definitely worth it for an added dessert at Xmas Eve dinner, but for me this recipe is going to be reserved for Xmas & possibly Easter.... any possibly upon special request. :)

Foolproof Rib Roast

Reviewed: Dec. 27, 2010
Wow! This recipe is great if you are in charge of the "meat", but aren't hosting at your house -- where the oven you cook it in is (my in-laws are vegetarian, but host Xmas). After the 2-3hrs of not opening the oven, I took it out, covered it with foil & brought it to the in-laws. I finished it in their oven and it received RAVE reviews from the carnivores - One said "This is the best meal I've had in this house in 30 yrs!" --- Thank you for this recipe & instructions - AWESOME!!!

I made this risotto in my pressure cooker and it turned out great! Next time I won't stir it as much to keep larger chunks of squash..

Simple White Cake

Reviewed: Nov. 27, 2010
Very simple, easy & delicate white cake. Although not very sweet at all. I halved this recipe & baked in a 9-in round. It was the perfect amount for one layer in my 3 layer 9-in round cake. 2 layers chocolate, 1 layer white & covered in whipped cream... YUM! I also added a touch more milk - prbly 1/4 or 1/8 cup

This is a very quick & easy Alfredo. NOTE: Cook it slowly or it will clump up & not be edible.

French Baguettes

Reviewed: Jul. 20, 2010
This was the first time I made this 'type' of bread... I followed directions as instructed & the bread came out pretty good. Don't be fooled though, this is the kind of recipe that you have to feel comfortable with and will only get better at the more experience you have at making it.

Spanish Flan

Reviewed: Jul. 20, 2010
Yum! Holy cow was this recipe good & simple. Only thing I would do differently is to literally pour the hot syrup right before pouring the egg mixture. I followed the recipe directions & ended up with the caramel completely stuck to the bottom of the pan when I inverted.

Dad's Peach Ice Cream

Reviewed: Jul. 20, 2010
I really like the ingredient ratio of this recipe. Unlike another recipe base I have that calls for 8 egg yolks.. There are 2 things I would do differently: 1) Strain the puree- I pureed fresh peaches with the skin on thinking the skin wouldn't be noticeable..... Big mistake, the tiny specs of peach skin that can be found in every single bite is just plain annoying & unappealing since some tend to stick to your teeth. 2) Like my other recipe, I would combine the eggs, sugar & salt until light/fluffy. Then temper with the warm milk & return to the stove. The egg/sugar/salt mixture blends easier with the milk. Also, if your using the ice cream attachment for the kitchen aid stand mixer - Freeze the bowl for at least 24 hrs and chill the complete ice cream mixture (egg/sugar/milk + heavy cream, etc) at least 12hrs if not more. This makes a HUGE difference in the way the ice cream churns.

Sky High Yorkshire Pudding

Reviewed: Apr. 23, 2010
This was a great recipe. I was so proud of my finished product! I made sure to have the milk & eggs @ room temp & also added salt (as other users suggested) end result was awesome. I halved the recipe and it easily made 6 in a large muffin tin. I may have taken them out a few minutes too early as they seemed a little eggie.

Red Wine Braised Short Ribs with Smashed Fall Vegetables

This was a simple & easy dish make. I slow cooked on the stovetop for 4 hrs & was tender. Next time I'll slow cook for most of the day so the meat falls apart to the touch.
