Garlic Butter Sauce I

Reviewed: Jun. 26, 2011
Simple, easy, delicious. Anything with this much butter is going to be high in calories though so just be aware when spooning it onto your pasta, seafood, or chicken.

Spinach Chicken Parmesan

Reviewed: May 16, 2011
Not a keeper. I didn't mind the taste so much but I would suggest not using packaged parmesan as it seemed to just get hard and not meld into the spinach enough on the top which gave it a weird texture. There just wasn't enough flavor for me so perhaps I'll make some adjustments and come back and re-review.

Penne Pasta with Cannellini Beans and Escarole

Reviewed: May 16, 2011
Not a big hit for the whole family but I enjoyed it. I used bowtie pasta since that's what I had on hand. It needed a little salt for my taste and was pretty good on the first day. Leftovers weren't as good but certainly fine for lunch at work.

Best City Chicken

Reviewed: May 16, 2011
I followed this recipe down to every last detail and it turned out yummy and was a big hit with my family. I didn't incorporate any of the other suggestions in the reviews and I was completely satisfied with how it turned out. I found the water in the bottom of the pan to be a little odd but tried it anyway. Next time, I'll try it without and see what the difference is. Definitely a keeper!

No Bake Choco-Peanut-Oatmeal Cookies

Reviewed: Jan. 12, 2011
Perfect. I added a few more oats because I like them a little thicker and I subbed dark cocoa powder. Yum.

Tasty Tuna Pasta

Reviewed: Jan. 9, 2011
We're big fans of tuna noodle casserole but sometimes I'm just not up to doing the whole oven casserole thing. This recipe pulls together very quickly and doesn't have to be measured out to be perfect. A box of pasta, a bag of tuna, a can of peas, and half a jar of Alfredo sauce seined with basil, oregano, and garlic. That is pretty simple. While the pasta boiled, I heated the Alfredo, peas, tuna, and dried herbs in a separate saucepan. I combined that with the drained pasta and topped each serving with a little shredded Parmesan cheese. My son added this to his list of favorites.

Mexican Pasta

Reviewed: May 28, 2010
Not only is this recipe yummy and versatile, it's easy and inexpensive to make. All these ingredients are pantry staples for me, and likely for most people. I haven't tried it yet but next I'm going to add in some shredded chicken breast. The "sauce" would be great served over baked chicken, too, I think. One quick tip - don't cook the bean mixture too long. The beans will get overcooked quickly and be a little mushy.
