Three Bean Slow Burn Chili

Excellent recipe! I made this for a Super Bowl Chili cookoff and won the contest! I halved the recipe but still used three cans of beans and it was perfect size for my 5-quart slow cooker. I followed the advice of other reviewers and used some jalapeno in place of habanero - it had the perfect amount of spice! I also used chipotle-flavored salsa and put one chipotle pepper in the chili; the flavor was subtle but it really added to this recipe. I used all low-sodium or "no salt added" ingredients for this, and only about 1/4 of the taco seasoning and it didn't come out too salty. I highly recommend this recipe if you want a really hearty, dinnertime chili with a kick.

Roasted Potatoes with Greens

Delicious! Even my boyfriend, who doesn't really like spinach, loved this! Adding the spinach not only tastes great but makes the roasted potatoes look nice, too! I will make this again.

Really Creamy Fettuccine Alfredo

This IS "really creamy!!" I scaled it down to two servings and based on that, I had to add an extra 1/8 cup (1.5 tbsp) of milk so it wasn't so thick. I want to mention that I threw a slice of provolone in the mixture so maybe that's why I needed the extra milk. I also used a bit of black pepper, Italian seasoning instead of basil, and a bit more garlic powder than the recipe called for. Pretty good recipe, I would use this alfredo recipe again! (I recommend you try Zucchini Alfredo from this site - best alfredo i've ever made came from that recipe!)

Whipped Cream

You can't go wrong with this recipe. I made half the amount it called for and it scaled down nicely. My boyfriend would have preferred it sweeter, but I thought it was perfect as I liked it more creamy-flavored. I would recommend adding more sugar if you like it really sweet. Great recipe!

Broccoli and Artichoke Bake

I thought this recipe was kind of bland. I added some garlic, pepper, and potatoes, and used chopped onions that I cooked with the mushrooms instead of green onions (I had none). I scaled it down on the site to 2 servings and followed the recipe from there; as I said, I just thought it was kind of bland. There is a possibility that because I added the potatoes that I should have made more sauce, but all of the veggies were covered before I baked it and so I figured it was enough. I wouldn't make this again unless I needed to use up some veggies in the fridge.

Tomato Alfredo Sauce with Artichokes

This recipe was good. I cooked the onions with the artichokes in some butter, and then made the cream sauce. I also added some fat-free cream cheese to make a richer sauce, and a bit of garlic. I used a lot of pepper (personal taste) and served it over angel hair. This recipe scales down easily when cooking for one!

Applesauce Bars

Delicious, and so very easy! I know a lot of people had some problems with the size of the bars, but I thought the bars came out fine in a 9x13; they're more like a "bar" than a cake square. I also used a cream cheese frosting drizzle-type topping. I made these in a pinch when I had company over and they were eaten right up! I highly recommend this recipe.

Smokey Chipotle Meatloaf

This is such a good variation for meatloaf! I followed the recipe exactly, except I used ground turkey instead of ground beef. I would highly recommend this recipe, and to follow it as-directed! I was skeptical about the oats because I had never used them in meatloaf before (though it may be somewhat common) but I was glad I did; the mixture was really wet, but the loaf came out perfectly. Maybe add one extra chipotle pepper if you want some heat; I typically like spicier food but the extra would have taken away from it, in my opinion. As I said, a nice twist on meatloaf! I served it with mashed potatoes and corn on the cob.

Best Brownies

These truly are the best brownies! I served them for a Labor Day BBQ we had with a couple of friends and everyone loved them! My boyfriend and his best friend both said they were the best brownies they ever had! I served them with some cookies and cream ice cream with hot fudge on top. As far as the recipe goes, I followed a suggestion to add more cocoa powder, so I added a little less than 1tbsp more. I made 1 and a half batch for a small roasting-type pan (it fits in my toaster oven, if that gives you any reference for size). They were the perfect thickness and I baked them for 24 minutes exactly (I kept a close eye - I didn't wanna screw up my very first batch of brownies! I would maybe take off one minute next time, for more "fudginess") I will use this recipe for every time I make brownies in the future -- I highly recommend this recipe! Don't overstir or overbake, and it's okay if they seem underdone before you take them out -- they'll have that "fudge" center!

Corn N Cucumbers Salad

I liked this recipe, but it isn't something I'd make often. I made it for a picnic; I thought the cool flavor would be good with hot wings, which it was! I also used red wine vinegar, and cut that down quite a bit (to about 2 tbsp...I only like a little vinegar flavor).

Green Beans Amandine

I loved this recipe! I didn't use fresh green beans, but used one can of French-style green beans (no salt added; scaled down to 2 servings). Other than that change (only one more minor thing -- I chopped whole almonds instead of using slivered), I followed the recipe and it was really good! The beans were amazingly flavorful; I'm not often the biggest green bean fan but I ate these right up! My boyfriend, who loves green beans, really liked this little twist on them as well. I would recommend this recipe for those who are tired of just plain ol' steamed green beans!

Tofu Parmigiana

Very good and very simple! Perfect recipe for those who are new to tofu. I quickly forgot about it being meatless myself! I followed the advice of another review which suggested using cottage cheese instead of mozzarella. I did just that with nonfat cottage cheese and it was delicious! Made it kind of like a lasagna. I will use this recipe again, so easy and so flavorful!

Squash and Pepper Skillet

I really enjoyed this recipe. It's perfect for vegetable lovers like myself :) I followed this recipe exactly and it was very tasty...I picked this recipe particularly because I didn't want my veggies loaded down with seasonings and this recipe allowed the flavors of the vegetables come through. It's a good, basic, foolproof recipe...I would recommend to not overcook the vegetables, and to add the garlic towards the end of cooking to preserve its flavor.

Summer Chicken Burgers

Really good! I only had cooked shredded chicken from leftovers and cooked it with the onion slices (which, by the way, I used red ones because they were the only sweet onions I had). I also left out the cheese, as I thought the mayo and avocado were hearty enough (personal preference). I also added a touch of chili powder to give these a more southwestern flavor and served with with a green salad. This is a good recipe for chicken burgers!

Montreal Steak Seasoned Mashed Potatoes

My boyfriend loved these potatoes (as did I!). I asked him to mash them while I added ingredients and he didn't seem to mind the cream cheese, which he doesn't usually like but we both agreed that it was tasty in these! I didn't have any bacon but it really didn't make too big of a difference. We left our potatoes unpeeled and used fat free cream cheese, lowfat cheese, and Country Crock. This recipe is a great and rich variation of mashed potatoes...I would use this again sometime. I also added some fresh minced garlic.

Burgundy Pork Tenderloin

This recipe was fabulous! The tenderloin came out so tender and flavorful! Besides omitting celery (because I had none) and using fresh garlic, I followed the recipe exactly. However, my gravy didn't thicken but I know it was because the wine hadn't come to a high enough temperature to stir in the gravy mix. Next time, I plan to bring the wine to a low boil after roasting before adding the gravy mix. This was a very easy recipe and I would recommend it for anyone to try.

BLT Pizza

Really good, though I used my own dough instead of refrigerated dough (Grill Dough recipe from this site, and rolled it really thin...BTW this was even better on the grill!). This was my first BLT pizza I made myself and I loved it! I hadn't had it with the lettuce coated with mayo before but I preferred that instead of spreading it on the crust, as I had it previously. Tastes like a BLT sandwich, but better!
