Quinoa Pilaf With Mushrooms

I didn't even add the onions, and it turned out to be very tasty. I didn't have rice, so I chose this recipe. It beats rice by far.

Poppy Seed Muffins

I love this recipe! I added more poppy seeds- 3Tbsp. in all, and I subbed honey for the sugar which I always do. I only used 1 3/4 Cups of honey per some reviewers suggestions. This is a great recipe and my 12 year old son said they were better than the Beans and Brews poppy seed muffins we get down the street.

Jalapeno Corn Bread

Super moist and tasty. I baked mine in a cast iron skillet and the butter made the crust brown and crispy!

Quick Crisp Snack Bars

This was great but a little dry, next time I will add a bit less milk powder. By the way, I used natural peanut butter, so that may have contributed to the consistency issue. My fat boyfriend said they were great but he nukes them and slathered on margarine. (he says "margarine has less fat"- in this professor voice) ;)

Personal Portobello Pizza

if you don't mind the slightly rubbery texture, these are great. I also cooked the mushrooms for about 10 minutes prior to topping and rebaking in effort to minimize the moisture. it seemed to work. BABA BOOEY!

Blueberry Pumpkin Muffins

I changed things. Hate it when people aren't up front about that. Okay: Switched out flour for whole wheat flour and oats for 1 part ww flour, 1 part wheat germ, 1 part ground flax seed. Switched out sugar for honey and added a speck more baking powder to balance. These are AWESOME and DELICIOUS and my little boyfriend loved them. P.S. I have a new boyfriend!!! He's slim and really really short. Not fat and mean like the last one!

Sloppy Joe Sandwiches

These weren't super sloppy but they were definitely joe like. HA HA HA HA HA!!! Just kidding. They were really really easy and flavorful. I will make them again and again because they taste good.

Blueberry Strata

This went over well at a New Year's Eve get together. However, one of the other dishes that got raves was "little smokies in barbecue sauce". So I take the praise with a grain of salt. (HA HA HA HA HA HA!!!) I did like that it was basically bread, berries and sugar.

Apple Pie by Grandma Ople

Oh boy! This was such a hit. Filling the pie after placing the crust on top was a little odd, but it turned out beautifully. My fat boyfriend and his mom (let's just say his condition is genetic) really enjoyed it. Once they got their fill I was able to try it. I loved it also. Just wish a little more was left. Oh well!

Downeast Maine Pumpkin Bread

My big boyfriend ate enough of this bread. But when I asked him if he liked it, he only said, "I ate enough of it, right?" I changed it to add some fiber with that benefiber dissolvable stuff. Sometimes I do this to help him stay 'healthy.'

Black-Eyed Peas 'N' Pasta

This was really good. I would change one thing- the ratio of black eyed peas to pasta. I don't like filling up on flavorless carbs. It was really good and my fat boyfriend liked it even though there wasn't any meat in it.
