Honey Lime Fruit Salad

This is a great fruit salad! Do NOT skimp out on the Pine Nuts! They have a unique flavor and crunch that makes this recipe. -- I roasted mine at 300 degrees for about 10min. before adding them to the salad (once they'd cooled) I made this for "Teacher Day" at school and they gobbled it up. -- Tip: don't add the bananas or pine nuts until you're just about to serve this. Even though there's lime juice, the bananas still go a bit mushy and take on some of the red from the strawberries. An you want the pine nuts to cool before adding them to the fruit. --- still really yummy and happily different than your run of the mill fruit salad. Enjoy!

Sloppy Joe Pockets

Quick, Easy, V-E-R-Y kid friendly. I'm a busy mom (what mom isn't?) , so I cheated and used sloppy joe sauce from a can. Spooned 2-3 tablespoons on each pocket with shredded cheddar cheese. I pressed my rolls out into 4 inch circles, and filled them, crimping with a fork to make "half circle" Sloppy Joe pockets. *** Note: I thought people were crazy thinking they could cram 3 tablespoons of meat into each one...but turns out yes you can! I just wasn't stretching the dough out enough. You need to REALLY stretch it to a point where u think it's almost too thin...do not worry. the meat will hold and they'll bake up nicely. don't forget the melted butter brushed on to make them yummy and golden brown! A real family favorite right now

Slow Cooker Mashed Potatoes

A great way to free up your stove during a busy Thanksgiving/Christmas day in the kitchen. Try adding a chopped up celery root to the pot while boiling the potatoes and mash right in with them afterwards for a tasty and subtle flavor boost. (remove stems and peel first) Enjoy an extra glass of wine with friends with the time saved on the big day. --Don't forget to toast your secret pal the slow cooker! ;)

Kalua Pig in a Slow Cooker

SSSOOOOooooooo good! I've made this a number of times now and it's a no brainer! Great for tailgates and potlucks -- you'll be a hit! I've made this for my friend who grew up in Hawaii and she begged for the recipe! You can find the Hawaiian Sea Salt at Trader Joe's or Cost Plus Market. Sur La Table also carries it, but at a much higher price. --Enjoy!

Ukrainian Red Borscht Soup

YUM! A great hearty, tummy warming soup for cold winter nights! I disagree with earlier reviews...the added ground pork does NOT make it greasy. Used Beef Broth instead of water to up flavor. Added dill as suggested by others to pump up flavor too! Served with Perogies for a VERY well liked meal. my family of 5 (three young kids) loved it!

Mild Cheesy Chicken Enchiladas

This is a really good recipe for families with younger kids. Like the title says it's a MILD recipe. It's great for younger taste pallets. If you have adults in your family (like my husband and I ) who prefer a bit more "flavour" reserved enough filling for the 2-3 enchiladas you're gong to eat and mix in a 4oz can of diced green chilis into just those before wrapping in tortilla. --- Just be sure you note which end of the casserole dish you place the "spicy" one in! -Enjoy!

Bella's Brussels Sprouts with Bacon

Really Yummy and a colorful addition to your Holiday/Festive Dinner. I made this for Thanksgiving last night and it really impressed everyone! Probably the best part is that this dish is prepared entirely on the stove top which is nice when the oven is on overdrive trying to get the turkey/Yams/Stuffing etc...done all at once. Really worth a try!

Apple Glazed Pork Tenderloin

DELICIOUS!!! Great dish for impressing company! I doubled the ingredients for the sauce (because I'm always worried there won't be enough) but you could just stick with the amounts called for in the recipe and have more than enough to spoon over the meat. --Made it for my mother-in-law and she was totally "wowed"!!

Blue Cheese Stuffed Mushrooms with Grilled Onions

Super easy and always a huge hit at BBQ's. I make this and take it along in a lasagna tin foil dish and just cook it on the grill, in the dish covered in foil. I also coat the mushroom caps in olive oil and garlic salt (shaking the caps around in a freezer bag with the garlic salt and oil) before I fill them with the cheese. There are NEVER leftovers of these!
