Crockpot Mac n' Cheese

Reviewed: Mar. 13, 2012
This is such an easy recipe and can be doubled to feed a crowd. It's not the "juicy" mac and cheese, it's the chunky/cheesy mac and cheese. A crowd pleaser!

Amish White Bread

Reviewed: Dec. 19, 2011
Excellent recipe and so easy to make! I had never made bread before and decided to try it. On the suggestion of a friend for a good white bread, I used 2 Tbsp. of sugar instead of what the recipe called for. I used my Kitchen Aid mixer with the dough hook to mix it all together. I wasn't sure what the yeast was supposed to look like but went on the article on AR to see for sure (it was completely obvious when it started proofing). I ended up baking mine a little longer in my silicone bakeware (turned out beautiful) because I did one loaf, 12 dinner rolls and a "pretzel" out of what little dough was left. I would like to have a taller loaf next time so I might use the entire loaf in one pan. I let it "rise" for the suggested 30 minutes after I put it in the loaf pan but it didn't grow in size a whole lot. Other than that, it was such an easy recipe to follow and a great one if you've never made bread. Thanks for sharing!

Garlic Prime Rib

Reviewed: Dec. 12, 2011
A great tasting roast! I bought a digital thermometer to use with this, and let me tell you... that's the way to go! If you don't have one, get one... I was using an older meat thermometer and had never had a roast turn out. The flavor in this was amazing, I didn't have any thyme so I added a little cilantro to the mix. Great flavor! Mine ended up cooking about 2 hours and 20 minutes (5.63# roast) using the suggestions of 460/400 like other reviewers before turning it down to 325 (I hardly ever follow recipes) and it was great. I think you could have done it at 500 and it would have been fine, but I figured I would try something "by the book" for once LOL Thanks for the recipe!

Ultimate Twice Baked Potatoes

Reviewed: Dec. 12, 2011
The flavor on these was amazing! I used Uncle Dan's ranch mix (mixed up with half mayo/half sour cream) as the ranch and added fresh chives to it. Once I had them stuffed (thanks to the reviewer who suggested using a ziploc to fill the shells!!) I sprinkled a little more cheese over the top and lightly seasoned with Johnny's... stuck them in the fridge for the next night and they were great!! A fantastic side to my Garlic Prime Rib (also on this site)... thanks!!

Melt - In - Your - Mouth Shortbread

Reviewed: Dec. 12, 2011
Excellent cookies! So easy to make and they taste so good. I did the recipe as it states and cooked mine between 8-10 minutes. It seemed like when the edges JUST start to color, they're done. The first batch I did I waited until the edges were a little brown and they were a bit dry... still good flavor, but a little dry. I think maybe next time I will keep a closer eye and only cook them 7-9 minutes... this was my first attempt at shortbread cookies and they turned out great! I used a cookie press after letting the dough sit at room temp for a while and they were awesome looking :) Thanks for sharing the recipe! I'm making more this weekend... mine are already gone!

Spooky Witches Fingers

These were a lot of fun to make and a big hit! Normally stuff like this looks super cute but doesn't have a good flavor, this did. I actually have used this recipe just for sugar cookie cut outs... For the fingers, though, I dust with cinnamon and sugar to make them look "dirty". Very yummy

Had a really good flavor, but more time consuming than I'm used to. This would be a good weekend dinner, but not during the week (like I tried)...

BBQ Bacon Ranch Dip

Reviewed: Mar. 9, 2011
This is the best dip I've ever tasted. I usually double this recipe for any potlucks or parties we go to and I never seem to bring any home. The 1st time I made it as stated, but have since tweaked it to (what I think) pefection. To the cream cheese, I add enough sour cream to make it a creamy mix (about 8 oz). This way it's easier to scoop up than just straight cream cheese. I also only use Uncle Dan's Classic Ranch mix... it's the best by far! I use Kirkland brand crumbled bacon that's already made and KC Masterpiece BBQ sauce with a lot of diced tomatoes... I usually serve it in my 8x8 casserole dish with Fritos. The salty of the Fritos and the sweet of the BBQ sauce makes a killer combo. If you like bacon and ranch, this is the dip for you... always a crowd pleaser! Thanks so much for sharing!!

Best Chocolate Chip Cookies

Reviewed: Feb. 27, 2011
Just as advertised!! Like another reviewer, I omitted the water and made up for it by increasing the vanilla to 1 Tbsp. These were super yummy, and as advertised crunchy on the bottom and gooey in the middle. I did have to adjust the baking time... I did 325 for 13 minutes and they were PERFECT!! Thanks for sharing :) My waistline will never be the same!!

Hash Brown Casserole II

Reviewed: Feb. 12, 2011
WOW... this is such an easy recipe to make and it tastes so good!! Talk about comfort food on a rainy afternoon. I normally don't measure ingredients, so I "eye-balled" this one and it came out fantastic. The only changes I made were bread crumbs (no extra butter) with seasonings on top (didn't have corn flakes) and I swapped out the onions for 2 Tbsp-ish of minced garlic... I'm a firm believer that you can't have too much garlic! This casserole came out just the right consistency and had a creamy flavor without being rich. You could use the full fat ingredients, but I figured the first time would be with 98% fat free soup and fat free sour cream... that way I can still alter it if needed, and there's no need to. Very yummy, thank you for sharing!!

Cheesy Baked Cauliflower

Reviewed: Jan. 14, 2011
This had excellent flavor but I didn't cook it long enough. I mistakenly thought if I just put water in the bottom of the casserole dish and cooked it longer that it would turn out okay.... not so much. My husband wouldn't touch it because it was crunchy but I ate it and it had a good flavor... I will try it again as it says in the recipe :)

Ham with Honey and Brown Sugar Glaze

This glaze has the best flavor and I love the way it carmelizes towards the end of baking time. I don't usually add the orange juice but as a last-minute thing added fruit cocktail juice to it and wow, how yummy! This is in my cookbook as one of my favorite recipes :)

Fantastic flavor, easy to do. Took a little longer than I expected, especially since my candy thermometer broke! Other than that, it turned out fantastic. You could probably cut back on the sugar a bit, but I like mine sweet. Fantastic, thanks for sharing!

Marinated Baked Pork Chops

Reviewed: Feb. 18, 2010
Fantastic recipe!! The flavor of this (without actually marinating the chops) was excellent. I also used it on chicken (doubling the batch both times for extra sauce) and marinated it for a day and a half and OMG it was so great. I mixed cornstarch and water into the remaining sauce and boiled for a couple minutes and drizzled it over the top... yum!! Thanks for sharing!

Quick Tartar Sauce

Reviewed: May 8, 2009
I have made almost this same recipe since our Safeway stopped carrying Nalley Tartar Sauce... I don't use mustard, though. I take 2-3 Tbsp of pickle juice and mix it in. It gives is a thinner consistency and you don't get they mayonnaise-y flavor.

Roast Leg of Lamb with Rosemary

Reviewed: Apr. 13, 2009
This recipe was so easy to do and it came out fantastic. I'm not a mustard fan so I was a little leery of using Dijon mustard in the marinade, especially marinating it for 2 days as suggested by others. But, even though I could smell the mustard when it was cooking, it didn't have a strong mustard-y flavor. And the lamb itself was so tender and juicy. I added a little more minced garlic and olive oil, as well as some Marsala Wine (just a litte, maybe 1/2 cup) to the marinade. I cooked it at 450 for 20 minutes then because I was kinda time-crunched, I cooked it for 360 for an hour. I would have liked to do it closer to 325 but company came early. Both the legs I did registered between 150 and 160 degrees and it was done evenly through, not bloody. I got rave reviews at Easter. A very good recipe, and a keeper at our house... thanks for sharing!
