Seven-Minute Pudding

Easy and delicious - almost as easy as making pudding from a package! Microwave is definitely the way to go - it's quick, and there's no risk of having the milk burn in your pot. I just stirred it every minute or so until it was thickened, then put it in for about another minute and it was perfect. No need to beat with a mixer - a whisk worked just fine (I did beat my eggs before adding them to the milk).

German Pancake

Love this recipe! We eat this for lunch/supper with bacon and fruit. This is the same basic recipe as is served at The Pancake House (they offer 3 versions - plain, with apples, or ham/cheese). I made this as written the first time (the syrup is amazing, even with milk/vinegar instead of buttermilk). The second time I sprinkled cheddar cheese on top, and baked in a large bar pan instead of the 9X13 pan, which worked better (it didn't puff up so much on the edges, so was easier to cut and serve). Love the cheese version as well. I'll be making this often!

Yam Casserole

Fabulous recipe... I made it with fresh yams, left out the butter and sugar in the casserole (I thought it was sweet enough, and the texture seemed fine without the added butter). I didn't have evaporated milk, so I substituted eggnog (a bit of extra sugar in that). Also, as in other reviews, I used regular cornflakes instead of frosted flakes. It was a hit with everyone at our family gathering, and I've already passed on the recipe. Thanks so much!!

Chicken with Asparagus and Roasted Red Peppers

Great recipe, and looks fantastic! I sliced the chicken breast (stretches it out further - I probably had a higher ratio of veggies), and I did saute it in a bit of olive oil, and added some cooking wine instead of the chicken broth. I also added mushrooms to the veggies. The balsamic vinegar added great flavor, and the cheese sprinkled on top is perfect!

Portuguese Soup

This recipe has been reviewed many times, but I had to add my comments. Amazing! A great way to use up a lot of cabbage. My husband just loved it, and it made lots, so we now have soup in the freezer. I added a bit more vinegar at the end, because I didn't think it had quite enough 'zing', but I probably added a bit too much, as then it had too much zing. This is a keeper!
