Low-Fat Cream of Tomato Soup

This was so tasty. My whole family enjoyed it including my 2 year old who normally doesn't like soup. I substituted low fat cream for the evaporated cream since i made it while traveling in Switzerland and i couldnt find it. I'll have to make double next time!

Baked Kale Chips

Really yummy alternative to regular corn or tortilla chips. Kids will love them and get their greens. My 14 month old son kept asking for more. I used a bit too much sea salt and oil. Less is best or the kale gets a bit soggy.

Spinach Bars

My son loved this recipe including me! I've been having a hard time getting him to eat greens. In this recipe the spinach is disguised. I used half the amount of cheese (used raw smoked mild cheddar) and it still was very cheesy and I used fresh shitake mushrooms which my son likes. Next time I'll use half the amount of salt (sea salt) as the cheese was pretty salty. Thanks for making my life simpler with this recipe.

Quick Vegetable Curry

I loved this recipe. I added a freshly juiced coconut for coconut cream (picked outside as I live in Hawaii) which was very tasty. I added frozen peas,carrots and corn mix and substituted eggplant since I didn't have carrots which we all thought was very tasty. I tried it again 2 days later and used cauliflower which was also good and added lamb. Yum!

Lebanese-Style Red Lentil Soup

So good! I used green lentils since I didn't have red lentils. Also, didn't have cilantro, but it turned out very good. The lemon juice really made it!

Wow! This was truly a tasty recipe. It was an exact duplicate of my grandmothers soup but I never had the recipe. Unfortunately, I couldn't find matzo meal at our store here on Kauai, so I had to settle for the soup without the matzo balls, but it was wonderful! Thanks!
