Microwave Apple Crisp

I made this earlier this evening for dessert. I hate peeling apples, so I only do it a few times a year for my husband's craving for apple crisp and apple pie. I used 5 fairly large Cortland apples, peeled 3 of them and left 2 of them unpeeled, just diced smaller. I tossed my apple chunks in cinnamon/sugar before putting the topping on. I also tweaked the recipe a bit and used 1/4 cup chunky peanut butter and 1/4 cup melted butter mixed. The PB gave it an extra boost and the peanuts gave it a nice, surprising crunch. Overall, I think the recipe is okay...I prefer an oven baked crisp over the microwave, even with the ease of the microwave. Honestly, once you've got the apple crisp prepared in the pan (and assuming you've pre-heated your oven) all you have to do is throw it in there to bake!

Garlic Butter

As is, the recipe is way too salty. With my own alterations, I give it a 4.5. I used margarine because that's what we keep in the house...1/4 tsp salt and 1 tsp garlic, but it was still too salty. I added about 1 1/2 tsp of sugar to try and balance it out and it worked. Next time, I will leave out the salt entirely!

Black Forest Chocolate Trifle

I am an experienced cook, so I get the idea of this version, but I am giving it a low rating because of the lack of attention to detail in the ingredients list and direction steps. No where in the directions does it mention the cherries! And, step #2 isn't complete...mix what until smooth? I know what to do, but what about a beginner cook? And, really, 1 pound of chocolate shavings on the top?? Seems like a LOT to me! I would just follow the directions to the original version and add in your layers of cherry pie filling....much easier to follow!

Swanson® Slow-Cooker Chicken Cacciatore

Next time I will have to remove the broth from the slow cooker and thicken it on the stove. Other than that the flavor was alright, not the best thing ever, but still okay.

Pumpkin-Apple Muffins with Streusel Topping

If you follow the recipe as is, they're okay. But following other suggestions lead me to an awesome breakfast muffin. I cut the amount of sugar in half (1 cup), I used whole wheat flour instead of all purpose flour, I replaced the oil with chunky apple sauce and instead of grating apples I used chunky apple sauce. I also doubled the amount of pumpkin pie spice. MMMMMMMMmmmmmmmm!!!!
