Ceviche Self-Portrait

Thanks for posting this! A few changes: I found as I was adding the tomatoes that it called for a lot and I wanted to feature the shrimp more so I held back a tomato. Also added more limes, cubed avocado and some chopped cilantro. It not only adds taste and texture but also great color contrast! Definitely making this again! My friends complimented me on it all night! :)

Pumpkin Puree

Thanks for posting this. It is very easy and simple to make. Just make sure you completely cover each pumpkin piece with foil, which will allow it to cook much faster.

Spiced Pumpkin Seeds

You pretty much can't go wrong with these! First time, I tried it with everything (except worcestshire) tripled, that turned out great. 2nd time I just doubled everything (including worcestshire) and I brought that to Thanksgiving- not one seed left. Everyone was munching on em all night! Thanks for the recipe :)

Pumpkin Dip

This was amazingly delicious! I made this twice. The first time I forgot to add the spices but it was still delicious. I tried it with cinnamon and sugar graham crackers- I thought the crackers were a little too sweet for the dip. But green apples and bread tasted great with it! The 2nd time, I got the spice but didn't have enough confectioners sugar and added regular sugar. Since I made the pumpkin puree fresh (it was still warm) I think the regular sugar melted and worked just as well. I brought the 2nd batch to Thanksgiving dinner and that was a great hit as well. This time I brought the apples and ginger snaps. I definitely recommend the green apples. The ginger snaps were again a lil on the sweet side. Everyone was raving about it all night. What a delightful surprise it was :) Thanks for posting this!

Pumpkin Chili

After a few modifications, as recommended by other reviews) I thought this dish was great! I added: 2 cloves garlic, 16 oz pumpkin puree, 2 cans black beans, and double chili powder. I am vegetarian so I nixed the meat all together. While everyone loved the dish, next time I will leave the pumpkin a little on the chunky side for texture (I made it fresh). The puree made the chili taste like the beans were mashed, which I guess is a matter of textural taste. Anyways, I am looking forward to making this again! It was fast and easy to make as well!

Best Chocolate Chip Cookies

These cookies were AMAZING!!! i did some minor adjustments based off some reviews. I used 1/2cup grounded Oatmeal (grounded with a blender), 2 1/2cups Flour, I let the eggs and butter sit out to be room temperature before using, I made sure the cookie sheet was cool (by running under cold water) before using, it took a little longer than 10 min but I just waited til it browned on the sides... everything else was as is... great texture and looks beautifully crusted on top :) thanks for sharing!!

Chicken Noodle Soup

This would have been so awesome had it not been so salty! I used 6 bouillon cubes, rather than 9 and it was still toooo salty! Other than that, it was easy. I might make again using less cubes.
