Pan-Fried Chinese Pancakes

Reviewed: May 19, 2010
I think the amount of flour is off. I had to add 3/4 cup more to make soft dough otherwise the dough will be runny. There won't be any kneading to do! I live in Shanghai and there's this thing called "Dong Bei Qiang Bing" and it looked a lot like the photo here but this definately wasn't it. Because this so-called "pancake" lacks in taste and need sauce to dip it in. I've had many Chinese street food but this one is not for me.

Milk Tart

Reviewed: Nov. 8, 2010
Amazing! I've never had milk tart before but I wanted to make something different and so glad I made this! My family loved it! Smelled so good after sprinkling some cinammon on top. Well, obviously cinnamon smells really good;) I used tin foil pie pan and didn't have any problem with the crust sticking like the other reviewers said when they've used glass pans. I made these exactly as written and since it didn't state what kind of milk to used, I used skim milk (my family only drinks skim milk so used what I had in frige). I read one of the reviewer stating that 2% milk didn't work, so I was kinda worried at first, but it turned out GRAET!! It held its shape even after cutting into it. My husband wanted me to make some more, so I'll definately make these again:) Thanks for this wonderful recipe!

Chocolate Chip Pumpkin Bread

Reviewed: Nov. 3, 2010
All I can say is "AWESOME"!! I didn't have enough eggs so had to halve the recipe and baked it in a 8x8 baking pan. I didn't want to use all that oil, so I used 1 cup pumpkin puree and 1/4 cup canola oil. I accidently added 1/2 tsp. more cinnamon than called for, but turned out GREAT! Though I might use less nutmeg next time. I will definately make these again for sure! Thanks for the awesome recipe;)

Delicious Raspberry Oatmeal Cookie Bars

Reviewed: Aug. 29, 2011
Oh, so good!! I've made them w/ and w/o cinnamon, and I can tell you 1tsp. of cinnamon is a MUST! I've also used canola oil in place of butter since I'm living in China where butter and margarine are kind of expensive. But boy, canola oil works wonders!! It's always a hit among my family and friends. My Chinese friends even like these! Now that's saying something! Oh, another thing, I used blueberry jam instead of raspberry. So yummy!! Thanks for the great recipe. Will use over and over again!!;)

No Bake Cookies III

Reviewed: Aug. 9, 2012
First time making this, it didn't turn out well, because I let it boil too long. Second time, I made it to a T and it was runny, so added 1 more cup of oatmeal and it was yummy after it hardened. Took awhile though. So for the third try, i cut the sugar to 1&1/2 cups ('cause i need to lay off some sugar!), and let it boil for 2 mins. Looked better than the second try but added 1 more cup of oatmeal and it was perfect! Well, at least for my family. Very yummy unhealthy recipe, LOVE it! Will make it again and again. ;)

Pumpkin Chocolate Chip Cookies III

Reviewed: Sep. 20, 2011
Great cookies! I've added 1/4tsp. each of nutmeg and cloves, and 1/4 heaping tsp. of ginger. But will change things around to get the taste right that best suits me. Overall, great recipe!! Update: I was making these cookies while I reviewed this and discovered something after baking them all. My very last cookie only had few chocolate chips in it, since I was planning on giving it out to some friends, I didn't want them to get THAT one so I ate thinking it won't taste as good. I was WRONG!! It was the BEST one!! The taste of the pumpkin was phenomenal! I'll be sure to make these again with just 1cup of chocolate chips or less.

Apple Pecan Cobbler

Reviewed: Nov. 19, 2010
Outstanding!! Didn't have pecans since I live in China where those stuff are impossible to find, but it was delicious enough that my family enjoyed it. But wish I had some pecans, 'cause that'll most definately make these taste even better!! I'll have to make them with pecans when I get back home;) Yum! Thanks for the recipe!

Fluffy Pancakes

Reviewed: Jul. 31, 2012
Love it! I've been making these for couple years now and my hubby and kids just LOVE it! So fluffy and yummy. I like to play around with this pancake recipe by making my own alternation. Like adding coconut flakes, chocolate chips, berries, etc. My favorite so far is with 1/8 cup coconut flakes and 1/2tsp. cinnamon. Yummm.

One Bowl Chocolate Cake III

Reviewed: Sep. 6, 2011
Very tasty! Had made them so many times and made some alternatives as well. Don't give me wrong, the original recipes is great as is. Instead of boiled water, I've added in 4 tsp. postom to the boiling water to enhance the chocolate flavor (I know some of you do it with coffee but I don't drink coffee so). I've also used same amount of mashed bananas in place of oil. Worked perfectly!! Sooooooo gooooood with chocolate frosting. Will definately make these again and again!

Pumpkin Butter

Reviewed: Nov. 3, 2010
Never tasted pumpkin butter before so i really didn't know what to expect. But it turned out pretty good. I added a little bit more apple juice since it was pretty thick to begin with. Other than that I followed the recipe to a T. I've heard mixing pumpkin butter with cream cheese tastes really great (sounds way awesome!), so I'm gonna try that. I bet it's gonna be delicious on bagels:)

Pumpkin Cheese Bread II

Reviewed: Oct. 28, 2010
This bread was good but I thought it needed more spice. I didn't have any orange zest, so added 1/4tsp. vanilla as the other reviewer suggested and omit the cloves and up the cinnamon to 1tsp. I also didn't have 2 loaf pan, so I use 8x8 inch pan and worked out perfect. It took 70 mins. to cook. If I were to make these again, I'm gonna add a bit more spice and maybe throw in some walnuts or pecans.

Kelsandra's Pumpkin Cinnamon Rolls

Reviewed: Oct. 16, 2010
Well, I didn't have cream cheese on hand so made vanilla icing instead. It might've been better with cream cheese icing since I thought the spice in the filling was way too much. It would've been perfect with just 1 tbsp. of pumpkin pie spice for me and my family. The dough was just perfect! Maybe because I didn't use canned pumpkin. I just microwaved diced Japanese pumpkin for 10 mins. and mashed it with a fork, cooled it and used it the next day for this recipe. Used about 2 cups of those and was perfect:) I was lucky since the pumpkin wasn't that watery this time around. (I use Japanese pumpkin all the time so I know.) Had hard time kneading though. Next time, I'll definately try it with cream cheese icing for sure;)

Sarah's Applesauce

Reviewed: Jan. 30, 2009
I wanted unsweetened applesauce for baking bread and stuff, so I omit the sugar and cinnamon, add an extra apple and 1/4 cup lemon juice, and used 1/2 water. Lemon juice made it taste real good!

Pumpkin Pancakes

Reviewed: Oct. 19, 2010
Awesome pancakes! My hubby doesn't really care for anything pumpkin, but he really really enjoyed these. He doesn't eat breakfast much, but this, he went for more. Too bad I only had 1 cup of flour left, so I had to halve the recipe. I use homemade pumpkin puree and added more milk to the batter. Will definately make it again! Thanks for the great recipe;)

Pumpkin Pie Squares

Reviewed: Oct. 11, 2010
This was okay. The crust kinda over powered the pumpkin pie taste so I didn't really like it. It's different, yeah, but I like the original pumpkin pie better. I think this crust tastes better with pumpkin cheesecake instead of pumpkin pie. I might try that later.
