Judy's Strawberry Pretzel Salad

I have made this a couple times and I really like this. It is easy, quick, and not too sweet. The frozen strawberries help set the jello layer up quickly too.

Sweet Vanilla Cupcakes

I was excited to try these instead of the typical box recipe. These were very pretty cupcakes...perfect size and shape. I might have over cooked them a bit because they seemed a little dry but they had a strange after taste to them. Maybe the fresh eggs were the problem...? The texture almost seemed closer to a corn muffin vs. cupcake. But maybe this was baker error...

Angela's Awesome Enchiladas

I used left over roasted sticky rotisserie chicken from this site to prepare this recipe. It wasn't a knock my socks off enchilada recipe but it wasn't bad either. It was a little bland for my tastes though. I think the chicken soup/sour cream mixture could have been amped up a little with some jalapenos or something. I think with some tweaking, this recipe would better suit our tastes.

Roast Sticky Chicken-Rotisserie Style

I was so excited to try this recipe because I love rotisserie chicken. People comment that this is better than store bought however, this was not the case for me. I didn't cook the chicken as long as recommended because it met the internal temp. requirements after almost 3 hours and I didn't want it to dry out. The outside of the chicken wasn't that deep, dark color you see from a store/restaurant bought rostisserie chicken and if I didn't have a thermometer, I would have guessed the chicken was not done based on the appearance of the outside. Although the seasonings were good, they didn't seep into the meat and only flavored the outter parts of the chicken. I'm glad I tried this recipe and was able to use the chicken in other recipes, it just didn't meet my expectations for a rotisserie chicken.

Simple Hamburger Stroganoff

We really didn't care for this. The texture was off and the flavor was bland. This reminded me of S.O.S. substituting noodles for the shingle. If you don't like S.O.S. you won't like this.

Italian Butter

This was good. I used garlic powder and fresh garlic because that is what I had on hand. The fresh garlic was a little to overwhelming so I think I will skip it next time. I have my dry Italian Herbs stored in a ziplock bag and container and ready for next time. I served this with crusty french bread for dipping, salad, and Eggplant Au Gratin from this site. Thanks!

Eggplant Au Gratin

I made this in an 8x8 casserole dish therefore I used more sauce and cheese than recommended. If I make this again, I will use 2 eggplants instead of one to account for the extra sauce or serve over noodles. I served this with a salad, crusty French bread, and Italian Butter from this site.

Crispy Rosemary Chicken and Fries

My 4 year old helped me prepare this meal. We used drumsticks as those are her favorite. I turned the chicken and brushed the meat and potatoes with the oil in the pan throughout the cooking time. Tastey!

Peanut Butter and Jelly Sushi Rolls

I made these for my daughter's 3rd birthday party. They were a little time consuming to make with a whole loaf of white bread but turned out pretty cute. The bread seemed to dry out fairly quickly. The texture of the bread turned a bit rough on the outside although these disappeared quickly. Both kids and adults enjoyed these cute little snacks!

Mexican White Cheese Dip/Sauce

This was a nice change of pace from the usual velveeta and rotel dip. It is a similar recipe to mexican restaurants that serve the white cheese dip. The restaurant cheese dip isn't spicy to me, just flavorful and kid friendly, as is this dip. It is pretty thick so I added quite a bit more milk to bring it to the consistency I prefer. You can easily make this more spicy by adding more cayenne pepper, red pepper flakes, or even subbing jalapenos for 1 or both of the green chiles however, I don't think it's necessary.

Stephanie's Freezer Spaghetti Sauce

I just realized that I have not reviewed this recipe. We made this spaghetti sauce last summer with fresh veggies from the garden. This was alot easier than some sauce recipes. I do think the sauce is a bit on the runny side but the tomato paste does help a little. I like using the roasted garlic tomato paste for extra flavor.

King Ranch Chicken Casserole I

I used leftover turkey to make this recipe. I was so extremely tired of eating turkey, this recipe disguised it really well. It was more like a nacho recipe vs. a casserole and I think I would have preferred nachos for dinner. The baking time and temps are off. I baked as directed and the casserole was not very warm and the onions were still raw. Even after cooking at a higher temp and longer period of time, I had to use the broiler to melt the cheese and get everything hot and bubbly but the onions were still raw. This recipe needs improvement IMO. Start by omitting the onions and layering the chips and wet mixture twice.

Slow Cooker Creamed Corn

I brought this to a potluck and it didn't go over well. The taste was sweet but I think I, and others, would have rather just eat plain old corn. It didn't taste horrible, just wasn't anything special. I have eaten creamed corn at a potluck before but it was more thick and creamy and had a bit of a kick from green chiles or jalapenos. I much preferred the spiced up version.
