Fish Tacos

Reviewed: Dec. 13, 2011
12/11: didn't have beer, used club soda and it was very good. everyone liked it. the sauce was excellent, didn't have capers and used a less cayenne. also iceberg lettuce instead of cabbage. def. fry up the tortillas lightly. if frying in batches, cool on a rack or they get soggy.

Mexican Lasagna

Reviewed: Jan. 21, 2010
this is NOT MY REVIEW>>>mixed the refried beans and spices in the warm pan with the browned ground beef (it mixed easier as it warmed). I also precooked the noodles and omitted the water in the recipe. I layered as followed: a light layer of salsa on the bottom, noodles, meat-bean mixture, pepper-jack/monterey jack/mozza cheese mix layer, salsa. I repeated these layers, ending with a layer of noodles. I then topped it with more cheese. I baked it for 45 minutes, let it cool for 10 minutes (solidifies a bit in the pan and allows for easier cutting), and topped each serving with plain sour cream. Oh, it was so good! And even better the next day! Thanks for sharing, Popcklgal!

J.P.'s Big Daddy Biscuits

Reviewed: Oct. 21, 2008
great. use butter and a little less than a cup of milk. No need to knead, just mix in milk a little at a time with a fork. Use large scoop and put on greased cookie pan. Very careful to use a pan with sides!! the butter melted and went all over the bottom of the oven, huge mess and smell. Great taste though!

Broccoli-Stuffed Sole

Reviewed: Oct. 9, 2008
everyone liked this. I used sharp cheddar and it was alittle strong, next time try mild. used leftover chineese rice and fresh brocolli, cut small and steamed first. also put a little panko on top. very good, larry and i liked it best but the kids ate it (except brocolli-MH).good w/tortelliniw /broc/tomato/butter/parm cheese/lemon pepper 1/10 this time no tortellini on side, just garlic bread from trader joes. est. 2-3 rolls per person. extra rice mixture goes in dish and gets baked with it. jack and cheddar mix was perfect. 2/12 made again. i had alot of the rice mix and piled it in the pan and the fish didn't cook all the way through. it was too crowded. next time if i have alot, put it in a separate dish.
