Slow Cooker Beef Stew I

12/10.. Increase flour to 1/3 cup,add some paprika too,used 3 lbs beef. Put flour mixture into bag. Shake beef in bag to coat. Sauté coated beef in 2 tablespoons olive oil and a little butter until browned. Near the end Add chopped onion to beef to sauté and soften. Transfer to slow cooker or tupperware. Mix beef broth with 1 TABLEspoon Worcestershire and ½ cup red wine. Pour into hot skillet to deglaze, then pour over beef and onions in cooker.Add remaining ingredients with these additions: increase garlic to 2 cloves minced, 2 bay leaves; add 1 packet McCormick's Beef Stew Seasoning. I did it on a friday(except veg), put in fridge until sat. am(add veg and a can of tom. soup)...very tender. 30 min high and then 6 hrs. low, i added mushrooms in last hour and needed to turn the hear up to high.

Pizza Pinwheels

1/2012: very good. i used the food processor with the pepparoni and mozz. worked out well. i also tried buffalo ckn and taco...not as good. egg wash yes. 1/14 made again and it was flat, never puffed up.

Fish Tacos

12/11: didn't have beer, used club soda and it was very good. everyone liked it. the sauce was excellent, didn't have capers and used a less cayenne. also iceberg lettuce instead of cabbage. def. fry up the tortillas lightly. if frying in batches, cool on a rack or they get soggy. 8/14 very good. i used 3 pieces of cod for the 3 of us. halved everything. mixed the sauce with some cole slaw blend and left a little on the side for topping.

Slow Cooker Beef Stroganoff I

12/11: very good, made for josh & ruth. i used 3 lbs of stew meat. I did not flour and brown first and it was good. i added 3 cans of golden mushroom soup, 1 1/2 tblsp of worstechire sauce, 1 tsp of garlic, pepper, 1/2 pkg onion soup mix, one cup of beef broth. cooked on low for 5 hours, then added mushrooms sauteed in butter and 4 oz. of cream cheese. very good. serve over egg noodles.

Alfredo Sauce

11/11:matthew liked this recipe. i halved it with half the pasta too. whisk the whole time so that it doesn't separate. good with bowties. 1/2014: i did not half it this next time but it did not need all that cheese, i only used 1 cup of cheese. turned out too thick so i added some pasta water until the consistancy was right. for me and larry i made a bag of steamed brocolli and split it in 2 bowls. also cut up a bunch of cherry tomatoes and put that in the bowls. I sauted up a few chicken breasts in evoo and butter and put that in the sauce with the ziti. Put it on top of the vegies for me and larry in our bowls. THis way the delicious vegies did not touch matthews alfredo sauce. we all liked it.

Baked Chicken and Zucchini

10/11 we all liked it. matthew didn't eat the vegies but what else is new. don't cook the zucchini and slice it thick. i used 3 and it was fine. the rest i kept the same, it was yummy.

Double Tomato Bruschetta

9/12. i halved everything and it made enough for the 3 of us. i sliced the bread, brushed with olive oil mixed with garlic, put a slice of mozz cheese on top and broiled till bubbly. then let cool, (give matthew some just like that) and top with brushetta before serving. yum.

Too Much Chocolate Cake

8/11 korri's house: fabulous. i followed exactly except i used only 3/4 cup of oil which made it plenty moist. i also don't have a bundt pan and used a tube pan with no problems. dusted with powdered sugar. used mini chips (good). served with cool whip and fresh berries. everyone loved it. 8/2014 made for korri again. great, really moist, with berries and reddi whip.

Shrimp Lemon Pepper Linguini

5* very good. i doubled the sauce, except for the pepper and I didn't have fresh parsley so i used 3 tblsp. dried parsley. Also, i didn't have linguini and used angel hair and it was perfect, i think linguini would have been too big for this sauce.

Monterey Chicken with Potatoes

6/11 very good. i marinated the chicken in fresh lime juice and 1/4 cup salsa. I put marinade in the dish with the ckn to cook, didn't take long. when it was not pink, i added the salsa, cheese combo...didnt have cilantro. 9/14 next time, cook potatoes 20 min first. and chicken 10-15. it was a little dry.

Ultimate Twice Baked Potatoes

11/10 awesome. no onions. half everything else for 5 smaller idaho bakers. only put bacon on top since ally doesn't like it. sour cream and cheddar mixed in was terrific.

Stuffed Shells III

11/10 followed exactly except i didn't add the other half cup of mozzerella to the sauce and no mushrooms. it filled 1 1/2 9*13 pans. i froze the smaller one. needs lot of sauce, about 1 1/2 jars.
