Easy Pesto

very good however: i used almonds already toasted form bj's, more than it says to. more nutmeg than a pinch, some parm. cheese. good if i have basil to use up. good over whole wheat spagetti, even matthew liked it (i didn't tell him what was in it) 7/09

Pasta Primavera with Italian Turkey Sausage

didn't have sausage,next time can try it. basic recipe: saute garlic,and onion in evoo..add veg, cook, add can diced tom w/herbs.and 2 bouillon cubes. also add a bunch of fresh basil leaves, maybe a little cooking water from the whole wheat linguini pot. very tasty.7/09

Swiss Chicken Casserole II

see note section. 5/09. homey and good. i used cheddar not swiss, cream of celery because i didn't have chicken and it was fine, milk not wine as some suggested. didn't add brocolli frozen but should have. and used garlic salt and lemon pepper too. alittle extra water over stuffing to keep moist. everyone liked it but said the recipe with the ritz crackers was better.

Spaghetti Pie III

4/30/09 everyone loved it. i mixed the sour cream with the cream cheese and then mixed with spagetti. w/ ground beef i added a little green pepper, onion and garlic. top with both mozz and cheddar and cheddar was voted better so next time just use the cheddar on top. thin spag. good.

this was good i would make again but with changes. i used dices tomatoes and next time try crushed. too sweet, cut back on sugar to 1 tblsp. good over white rice, others suggested egg noodles.

Baked Brie in Puff Pastry

used pillsbury puff pastry, 1 sheet rolled out. used brie from costco. sliced in half added peach jam (didn't have apricot) and sliced almonds. cut off the rind of the brie, wrapped it up. with extra pasty cut out leaf for top. cook on a pan with sides because it leaks a little. very good, thanksgiving 08

No Bake Peanut Butter Pie

used xtra serving size graham cracker crust. used about 11 ounces of cool whip and it fit perfectly and tasted great. i drizzled chocolate syrup on top. didn't have reeses but that would have been nice for the presentation. 11/08 amy and ruth

Ground Turkey Casserole

everyone liked it, very easy. definitely add garlic and spices thyme, oregano and basil to turkey when cooking. i mixed cheeses with the noodles. i used alot of sauce 2 times amt. 11/08 will make again.

Pineapple Chicken Tenders

tasty! A few changes. I used breasts, marinated with half the dressing and used that to brush on while cooking. The other half i poured over the chicken when done. Next time add corn starch to thicken. and maybe marinate with less than half so there's more left at the end.

Spicy Baked Sweet Potato Fries

Made alot of changes but very tasty! i gave the original recipe a 4 but my recipe is a 5. peel potato and par boil because otherwise it's too hard to cut up. Mix with olive oil, kosher salt, pepper and montreal steak seasoning. Put on foil lined, greased pan in 400 oven for 20 minutes, then reduce to 350 for 20 minutes and then back up to 425 until done. I did this becasue of what i was cooking with it (biscuits) not because it's better...it just worked. be very careful not to burn, check the bottoms and flip. slice thin.

great. use butter and a little less than a cup of milk. No need to knead, just mix in milk a little at a time with a fork. Use large scoop and put on greased cookie pan. Very careful to use a pan with sides!! the butter melted and went all over the bottom of the oven, huge mess and smell. Great taste though!

Broccoli-Stuffed Sole

everyone liked this. I used sharp cheddar and it was alittle strong, next time try mild. used leftover chineese rice and fresh brocolli, cut small and steamed first. also put a little panko on top. very good, larry and i liked it best but the kids ate it (except brocolli-MH).good w/tortelliniw /broc/tomato/butter/parm cheese/lemon pepper 1/10 this time no tortellini on side, just garlic bread from trader joes. est. 2-3 rolls per person. extra rice mixture goes in dish and gets baked with it. jack and cheddar mix was perfect. 2/12 made again. i had alot of the rice mix and piled it in the pan and the fish didn't cook all the way through. it was too crowded. next time if i have alot, put it in a separate dish.
