Pumpkin Walnut Cake

Reviewed: Dec. 6, 2010
12/10 its definitely even better with a dollop of whipping cream. Also, i mix about 3/4 cup of the cake mix into the pumpkin mixture--I think it gets rid of that mushy texture the pumpkin otherwise tends to have. added pecans on top, yummy. matthew didn't like it but everyone else did.

Slow Cooker Beef Stew I

Reviewed: Dec. 6, 2010
12/10.. Increase flour to 1/3 cup,add some paprika too, used 3 lbs beef. Put flour mixture into bag. Shake beef in bag to coat. Sauté coated beef in 2 tablespoons olive oil and a little butter until browned. Near the end Add chopped onion to beef to sauté and soften. Transfer to slow cooker or tupperware. Mix beef broth with 1 TABLEspoon Worcestershire and ½ cup red wine. Pour into hot skillet to deglaze, then pour over beef and onions in cooker.Add remaining ingredients with these additions: increase garlic to 2 cloves minced, 2 bay leaves; add 1 packet McCormick's Beef Stew Seasoning. I did it on a friday(except veg), put in fridge until sat. am(add veg and a can of tom. soup)...very tender. 30 min high and then 6 hrs. low, i added mushrooms in last hour and needed to turn the hear up to high.

Italian Sausage and Peppers with Penne

Reviewed: Oct. 31, 2010
i did this and it was awesome: saute skinny premio sausage with basil in big pot w/evoo until browned. then cut up and continue to cook in a little water so it doesn't burn. after it cooks down, add diced red pepper and some onion and some pizza seasonings. cook that together. then take a 28oz can of whole tomatoes and put in the blender. add s & p and basil until it tastes good. then add that to the sauce. also add quarter to a half a can of paste. let it simmer together for min to an hour to blend the flavors. cook penne and add to pot. put the whole thing in one of my large bowls in d.r. top with parm cheese. serve w/garlic bread and salad. yum 10/31/10.

Best Ever Sausage with Peppers, Onions, and Beer!

Reviewed: Sep. 24, 2010
the idea is good but i used corona and that wasn't good, it had an acid taste to it. next time: saute pan brown sausage in evoo, remove, brown onions and peppers, remove both to crock pot. deglaze pan with something else, white wine maybe or a different beer or a stock. then add tomato paste, and spices or just a can of diced tomatoes. put in crock pot on low for an hour or 2 to meld the flavors, i liked that part.

Marinated Grilled Shrimp

Reviewed: Jul. 6, 2010
7/10 not so great, i listened to reviews and used chili sauce, but kathleen followed recipe exactly. i didn't care for the flavor either way. try something else next time. also, don't pack too much on the metal skewers, because they won't fit in the rack. leave an inch on the end.

San Antonio Taco Salad

Reviewed: Jul. 1, 2010
6/10 someone said:To save on calories, you can bake your bowl. Just get a glass round shaped bowl, spray your burrito size tortilla with cooking spray and bake for about 5 minutes at 350. Sometimes I'll cook it a little longer if I want it a little crispier. This worked very well. spray DO NOTpaint on oil, it will drip. i added some corn and some rotel tomatoes. all but matthew liked it.

Lemon Chicken Piccata

Reviewed: Jun. 24, 2010
6/10 used 3 breasts and it wasn't enough. use stainless steel frying pan. followed recipe except i used ckn cube and i didn't like it, so i added some canned ckn broth mixed with wondra to thicken the sauce. tasty, we all loved it. good with couscous mixed with zuccini. ally doesn't like couscous. 12/24/11:i used real lemons and it was sooo bitter. next time try the juice of the lemon but don't put the slices in.. the white part is so bitter when it is cooked. but do try again.
