Pesto Pasta with Chicken

4.5 stars. june 2013 very good. i left out the garlic because the pesto had plenty of it. i added mushrooms and red pepper which was very good. also sauteed chicken pieces in sun dried tomato oil. we all like it, matthew wasn't home but would not have liked it.

3/13 very good. i made an alfredo sauce and just added reg. jar sauce. I also added some fresh broccoli to the pasta water and fresh tomatoes to the sauce at the end. yum

Pineapple Upside-Down Cake VII

12/12 don't have cast iron skillet so i used 9x13. melted butter on stove and mixed in brown sugar, a little less than 1.5 cups. spread in bottom of pan, arranged pineapple slices and cherries on top, then poured in batter (replace water in mix w/juice from can). when done inverted onto cookie sheet, then when cooled carefully transfer back to pan. yum

Easy, Cheesy Tortellini Bake

matthew really loved this. i used about 24 oz. of tortellini, half a jar of tomato sauce and 1 cup of homemade alfredo sauce, plus spices. after mixing together, transferred to a 9x13 pan and sprinkled mozz on top and broiled. left off the spinach because i knew no one would like it but larry. it was a little too cheesy for me and larry. next time maybe add some tomatoes and less mozz cheese and less alfredo sauce. but matthew and ally loved it . 12/12

Apple Crisp II

halved everything and put in an 8x8 dish. a little watery so use less water next time. 10/13: full recipe, used a variety of apples, very good. i used half the water in the recipe and it was still watery. some users suggesting mixing the white sugar mixture in with the apples instead of sprinkling on top, next time try that and use only 1/8th a cup of water.10/14: 1/8 th cup of water and double the flour in the sugar mix worked well. used 5 granny smith and could have used 2 more to fill large white dish.

Mrs. Sigg's Snickerdoodles

i used all butter and it was very good. I made the dough without rolling in the cin.sugar and put it into 24 muffin tins molding it up the sides. baked for 8 minutes, let it cool and then add the ingredients for cream cheese blueberry pie. very very yummy (liptons7/12)

Slider-Style Mini Burgers

halved everything. Target has the little rolls. wrap good in foil and don't use a baking sheet. we all liked it. good and easy...try for a party or for a football game. def use kings hawaiin sweet rolls

4/12: easy and good. use box grater slice cut and cover microwave base with parchment paper. done in about 4 minutes. salt good, next time try the lime with the oil suggested by someone.

3/12:used graham cracker crust, great. and cool whip also great. the premade crust was small 6oz so i halfed the cream cheese part to make room. put the pecans on top of the last layer of cool whip.

Eggplant Parmesan II

3/12..1 eggplant good for the 4 of us. we all liked it. i salted ,rinsed, dried first. then egg, bread crumbs. bake on oiled sheet for 7 min. per side at 450. after putting it together only bake until the cheese melts otherwise its mushy.

Black Bean and Salsa Soup

2/12: yum. i only had 1 can of beans so i halved the recipe. i used chicken broth not veg. but first i cut up a slice of bacon and sauteed it in the pot (no oil needed) when cooked add onion and saute, when cooked add garlic. then add the beans, broth, salsa, cumin and a little lime juice. i pureed the whole thing. some reviews say to leave some beans out before using the emersion blender.

Blue Cheese Burgers

2/12. they really shrink so make 3 out of 1 lb not 4. i did not have chives but put minced onion in larry's. put gorgonzola on top. maybe it will be different with blue cheese? maybe better? memorial day 2103 panov & enquists followed exactly but 1/3 of all with the exception of the blue cheese, i used about 3 oz crumbled. they were great! also instead of 1 lb of beef i used 1/2 pork and 1/2 beef combo pack.

Shrimp Scampi Bake

2/12:only ally me and larry & we all really liked it. i used just enough shrimp for the 3 of us so about a lb. i used about 6-7 tbls of butter, a little less than 2 tbls. mustard, same lemon juice, garlic, parsley. added a glug of white wine too. also added old bay in the mix and sprinkled on the shrimp w/ s&p. after it baked for about 7 minutes, i sprinkled panko and more old bay on top and put under broiled until crispy. yum.great over whole wheat spagetti
