Feta Chicken

3/15: sandy and mike. i didn't follow exactly. i used my other recipe but i tried it wiht feta this time. just ok, i say go back to mozz next time. i pounded and filled and rolled up with toothpicks. dipped in flour egg and bread crumbs and sauteed briefly on all sides in oil and butter. put in white corningware. deglazed pan with white wine and after a minute or two added some chicken broth. put in bottom of pan and put in fridge until ready to put in the oven. very moist and tender but the feta kind of melted out.

Chicken with Lemon-Caper Sauce

3/15: i wanted a recipe like this for fish but the flounder was way too thin for this recipe. the sauce was too lemony also. not really sure how to cook very thin fish? i used dover sole from trader joes. i think it would be very good rolled up like the recipe that rolls it with rice brocolli and cheese. but i was looking for something that matthew would like. oh well

Absolutely Ultimate Potato Soup

2/16: very good. a few changes. i used scallions instead of onion and just a little but either one would be fine. i used 2 slices of bacon only because only 2 of us were having crumbled bacon on top. i did not mix the bacon in with the soup, i think that wouldn't have been good. for the roux, i used 1/2 cup heavy cream and 1/2 cup half and half and it was way too thick. after combining in the soup and pureeing, i had to add 2 cups of boiling water with one chicken cube in it to thin it out. i used dried cilantro. needed more flavor at the end so i added dried mustard, cayenne pepper, salt and ground pepper. alot of each. then it was very good. matthew, larry and i all like it with bacon on top and crountons.

To Die For Blueberry Muffins

2/15 very very good. i used 11 regular size muffins, filled each to almost the top. for crumb topping i used brown sugar and only about 2 tblsp of butter, like a reviewer suggested.

Slow Cooker Mac and Cheese

1/14 very good. i boiled the elbow almost all the way but not quite. i used about 1 cup of shredded taco mix cheese and one whole chunk of extra sharp cabot. i mixed in a little siracha hot sauce wiht the milk and cheese soup to give it a little kick. and i only had one egg, i don't think that effected much, but next time use 2. turned out really good. would make again when we have company.

Italian Chicken Skillet

1/15: halved everything and used chicken sausage and zuccini instead of chicken. cooked pasta 3/4 of the way in water before finishing in pot. we all really liked it.

Spicy Bean Salsa

great with grilled chicken salad. i used what i had, one can black beans, one can of corn, one can of rotel tomatoes mild, half a green pepper, garlic salt, pepper, cumin, chili powder, lime and a little italian dressing but not much, use more olive oil.

Creamy Au Gratin Potatoes

12/14: christmas dinner. great with ham. i doubled the recipe for 5 lb bag of russet pototoes. add more flour because it's thin without it.left out onions. took a long time to bake and bubbled over, so put a baking sheet underneath. much better than mashed potatoes. also no gravy needed, just different types of mustard

12/14: sangria from costco, half cup brandy half cup triple sec, 1/3 cup oj and sprite. very good. didn't have frozen lemonade and lemon juice sounded too tart. cranberries, apples only.

The Best Parmesan Chicken Bake

12/14 everyone loved it, rothbury croutons better than ms. callandra's. i did not brown it first and it was fine. let cook uncovered first 15 min and then put lid on for the rest of the time. good with a side of spagetti with butter

Slow Cooker Buffalo Chicken Sandwiches

12/14: not very good. but i did make a lot of changes. i used half a bottle of siracha instead of a whole one and also added a cup of chicken broth to cover since i was going to be at work for 9 hours and it is only suposed to cook for 5. so it turned out dry and not very flavorabe but PLENTY HOT!

Restaurant-Style Buffalo Chicken Wings

11/14: very good, make again but spicier this time. add more cayenne, and more hot sauce. this time i halved the hot sauce and butter mixture to 1/8 cup each because that's all the franks hot sauce i had. the amount was fine though, i brushed it on. maybe if i poured it on like they said it would have bee better.

Burrito Pie

11/14: used round springform pan and trimmed large flour tortillas to fit. i doubled the tortillas as someone else suggested. used 3 layers, 6 total. didn't have refried beans so used black beans. saute turkey, add taco seas mix, and can of rotel tomatoes and beans. layer with shredded cheddar cheese. good with lettuce and a little sour cream. yum. larry loved it, matthew just ok, i liked it alot. also only used 1 lb of turkey.

Ranch Chicken Tacos

10/14: 4 frozen breasts, jar salsa, some enchilada sauce and 3 tblsp. taco seas. mix in crock pot for 6 or so hours. shred after a few hours. hear corn tortillas in frying pan. shredded lettuce, tomato, mex cheese and the ranch sauce was very tasty. i halved the ranch sauce.
