Mom's Zucchini Bread

What a yummy recipe! I tried it as is first, and it was great. Out of a need to eat healthier, I did alter it the 2nd time. I used 1/2 cup of unsweetened applesauce, and 1/2 cup of sunflower oil to replace the 1 cup of vegetable oil. 3/4 cup egg beaters in place of the eggs, and I also used 1/2 cup of Agave nectar in place of the sugar. This is the perfect blueprint for Zucchini bread. Thanks for sharing!

Broccoli and Carrot Lasagna

This is a tasty recipe. I made a few changes: used 3/4 cup fat free ricotta instead of the cottage cheese, used shredded parmesan cheese, omitted the rosemary and used part skim mozzarella. I also used chopped asparagus, zucchini, shredded carrots and broccoli. I loved the use of the cream of mushroom soup. It was a big hit. Thanks!

Whole Wheat, Oatmeal, and Banana Pancakes

I started making my own pancake mix a few months ago, and this is a great recipe. The only adjustments I made was to use instant oats (skipped the blender), egg beaters (cut the fat/cholesterol) and I used skim milk. I also added 1 tablespoon of wheat germ. All in all a great recipe, with a few tweaks for the weight conscious.

Chicken and Gnocchi Soup

I really liked this recipe. I did make a few alterations to cut the fat. I used 1 cup of fat free half and half, and added potato flakes to make the soup richer. I also added some nutmeg, and some red pepper flakes to kick it up a notch. Thanks!

Chef John's Pumpkin Pancakes

I really loved this recipe. I did tweak it after the first time I made it, since we are trying to be healthier. I used 1-1/2 cup all purpose flour, and 1/2 cup whole wheat white flour. I cut ou the white sugar, and added 1 tbs agave nectar. Also added a few pecans, that were soaked for 10min in hot water. My husband loved these pancakes. Thanks!
