Fudgy Brownies I

OMG! So yummy! These are the best brownies I've ever made, including store-bought mixes, and I have tried a lot of different recipes. I made a couple of changes -- I substituted brown sugar for half of the white sugar; I substituted 1/2 cup butter for one of the 1/3 cups of oil; and I added about 1/3 cup chocolate chips. They are really the perfect combination of cakey and fudgy and are not too sweet. Perfect!!

Pecan Pralines

The recipe as written was a big ol' mess. Half the batch seized up on me and I had to reheat them with extra butter. After that they turned out okay. I will try a different recipe when I want to make them again.

Overnight Caramel Pecan Rolls

These were awesome! I rolled and sliced the dough pretty thin and it made 5 cake pans full (around 9 rolls each). (I used disposable foil pans for easy cleanup.) I let one pan rise for about 30 minutes and baked it right away; the other pans I froze in gallon ziplocs, thawed in the fridge overnight, and baked per the recipe. Relatively easy and SOOOOO good!! These are a keeper for sure.

Easy Microwave Chocolate Cake

This was really good! I did increase the sugar to 2/3 cup per other reviewers and microwaved for 3 minutes (just a microwave variation, I'm sure). Also spread some strawberry preserves on top after it came out of the microwave -- yum yum!! We will definitely be making this again!

Oven Fried Chicken II

Meh. It was just all right for me. I used tenderloins instead of thighs, so I reduced the cooking time. I think because of that, the breading didn't get crispy enough. It was really easy though!

Apricot-Glazed Pork Chops

Man this was awesome! The glaze is good enough to eat on EVERYTHING! So easy and so good! We used bottled minced ginger and it was great.
