Made this once and it was OK, but easy.
The second time I made it, I realized about 5 minutes before I left for work that I had no slit peas. Everything else was in the crockpot and ready to go. I brought a 1# bag of black-eyed peas to a boil, drained them, and threw them in there. Cooked on low x 8hrs. Used regular sausage, not smoked. I'm not a fan of black-eyed peas, but this was fine to me and my husband loved it--he's a tough critic.
