Easy Roasted Pork

This was so easy and soooo good! I used pork tenderloin, cooked for about 30 minutes in a 425 degree oven in a covered casserole dish and it was really juicy and yummy. I cut the sugar in 1/2 as well and didn't have cinnamon applesauce, so I used one of my son's Mott's applesauce cups and added about 1/2 tsp cinnamon. An absolutely PERFECT recipe for a busy, working Mom of two - requires such little prep and cook time it's a great, healthy weeknight dinner. Served with corn on the cob. My husband really enjoyed it and my 2 1/2 year old gobbled it down. This is definitely a keeper!

Grandma's Lemon Meringue Pie

I made this for Father's Day for my husband and he absolutely loved it. He said it was the best Lemon Meringue pie he's ever had. Maybe he was being overly-generous, but it really was good. It's definitely time-consuming, but well worth it if you like lemon. I used the juice of 3 lemons and extra fine sugar as suggested by another reviewer and the custard came out perfect. I let it sit on the counter to cool for an hour before refrigerating and the next day when it was time to serve, the consistency was absolutely perfect.

Seared Sea Scallops

These were very easy and tasty. I didn't have lemon pepper on hand so I used regular black pepper instead and lemon infused grapeseed oil rather than olive oil. They came out great! I also didn't have fresh parsley or lemon juice but I didn't even miss it. Next time I'll try it exactly as written as I do like lemon.

Best Brownies

These were soooo yummy!! I brought them to a Super Bowl party and everyone loved them. I was really impressed with how they came out and will NEVER buy a boxed brownie mix again. They are so easy to make and I typically have all the ingredients needed to make them, so I can whip them up anytime. I followed other reviewer's suggestions and slightly beat the eggs before adding to the melted butter and stirred in the dry ingredients just until everything was blended and my brownies came out moist, fudgy and perfect! These are definitely the best homemade brownies ever!

Lime Chicken Soft Tacos

This was very easy, but I wasn't crazy about the flavor. There was way too much pepper for my liking, but my husband really liked it. I substituted chile lime seasoning for the 1/2 lime and dried oregano. Next time I'll cut down the pepper by half and increase the chile lime seasoning. It took nowhere near 20 minutes to cook the diced chicken and I wouldn't recommend cooking it that long on med hi heat otherwise it will be very overcooked. It only took me about 7 min to initially cook the chicken until it was no longer pink and then I lowered heat and let simmer for another 5 min so the marinade would cook in. Very healthy and quick to whip up, though.

Whole Grain Waffles

These were very easy to make and quite filling. I substituted my son's organic unsweetened applesauce with cinnamon, thinking it would give it some good flavor, but didn't really taste it. Next time I'll probably add some cinnamon to the batter. Good, healthy recipe that made 8 Belgian waffles. 2 year old son liked them with some butter and organic honey on top. Would definitely make them again. I froze the leftovers as a quick breakfast so hopefully they'll be just as good after a quick thaw in the toaster.

The Best Rolled Sugar Cookies

This dough is great to work with and it definitely made at least 60 cookies! I did increase sugar by 1/2 c and doubled the vanilla as other reviewer's suggested. I made this the night before and separated the dough into 4 balls so that it would be easier to work with and it was perfect. I'll definitely be using this recipe as my Christmas cookie recipe every year.

Yummy Eggnog Pie

I wasn't totally thrilled with this recipe, and I love eggnog. I love how easy it was to make, but it was lacking something - I can't quite put my finger on it. The texture was nice and fluffy, which is great after a heavy holiday meal. I probably wouldn't make it again, though.

Sugar Cookie Icing

This icing was very simple to make and did a great job of coating my sugar cookies and keeping decorations/sprinkles on them. I didn't use food coloring so I can speak to how well it holds color, but it definitely did stay shiny as other reviewer's have stated. It is very sweet, though. Maybe next time I'll cut down the amount of corn syrup.

Pie Crust IV

This is a perfect, simple recipe for a pie crust. I'd never made one from scratch before and thank goodness I found this recipe. Had to make one for Christmas dessert because the pie crust I'd bought puffed up during cooking and was unusable. The only thing I wasn't crazy about was that I didn't roll the crust quite thin enough, which was my own fault. Other than being a bit thick, it came out perfect. I don't know that I'll ever buy another pie crust again!

Yummy Sweet Potato Casserole

This was very easy to make and was a big hit for Christmas dinner. As other reviewers suggested, I baked 4 very large yams in the oven the night before and then skinned and mashed them Christmas day. I used a hand mixer to mix in the eggs, milk, butter, etc. and added 1 tsp of cinnamon and 1/4 tsp of cloves. The only reason I'm giving it 4 stars is that it was a bit sweet for my taste. The sweet potato itself wasn't too sweet, it was the topping that was a bit too much. I would definitely recommend against doubling the topping as I felt it was more than enough to sufficiently cover the entire top of the casserole. Maybe next time I'll cut some of the brown sugar from the topping. I also increased the pecans to 1 cup because I love pecans. Overall very good and I was asked for the recipe, which is always a great sign.

Mostaccioli with Spinach and Feta

I'm giving this 4 stars mostly because the prep is so darn easy. I followed other reviewer's suggestions and added 1 can of organic diced tomatoes along with 2 fresh romas. I also was concerned that this dish would be bland based on other's reviews so I did add a few shakes of Italian seasoning and balsamic vinegar. I also used garlic salt instead of minced garlic. Next time I think I'll omit the balsamic, add some sliced black olives and use bigger pasta (I used piccolini because it was what I had on hand). Very healthy and a good way to eat your spinach.

Lemony Quinoa

I followed other reviewer's suggestions and used 1/2 chicken stock, 1/2 water, added the cumin & cayenne pepper while the quinoa was cooking. I don't like onions so I also added a few dashes of onion powder while it was cooking. Omitted the fresh parsley as I didn't have any on hand. It could use a bit more flavor, but it was an easy, tasty and healthy dish that I would make again.

Antipasto Salad

This is sooo good! I love antipasto and in the form of pasta salad, it's amazing. I scaled the recipe in half because there was no way my husband & I could consume 12 servings between the two of us, and it makes the perfect amount to keep in the fridge for a quick lunch or dinner side. I omitted the Asiago as I didn't have any on hand and didn't want to buy any and it still tasted great with just fresh shredded Parmesan. Although I only used 1/2 package of Italian Dressing Mix, I could've used less, maybe 1/3 instead. It really overpowers the taste.

Classic Macaroni Salad

Made this for a 4th of July cookout recently and received lots of compliments on it. I used the small, mini-tube pasta and it yielded WAAAAY too much pasta for the recipe; should've stuck with the elbow macaroni instead. I had to double the dressing because of this but it turned out great and hubby really liked it. I used 1/2 tsp onion powder in place of the onion because we don't like onions in our food, and it tasted great!

Artichoke Chicken

I love artichokes and was looking for something different to do with chicken and really enjoyed this recipe. It was easy to make and turned out perfect. I ended up using thin sliced chicken breasts in a 8" square baking dish, layering the slices and then spreading the artichoke mixture on top and it was great. Chicken was tender and flavorful. Will definitely make this again.

Zucchini Risotto

This was quite labor-intensive to make and the flavor was lacking. As a full-time working mother and wife, I need recipes that are healthy, delicious and quick - this is not one of them. I love risotto and was hoping this would turn out well, but it's in desperate need of garlic salt and something else. Not a big fan of the addition of the thyme, and I usually like thyme. Definitely will not make this again. Only reason hubby and I ate it was because we can't stand to waste food.

Spanish Rice II

Love this recipe. Very easy to make and tastes wonderful. I also use chicken or veggie broth instead of water and decrease the amount of liquid used as I like a fluffier, drier rice. I also add cumin because I love the taste. I don't use onions in my recipes but did add in some minced garlic for added flavor.

Brown Sugar Meatloaf

Waaaay to much brown sugar in the glaze, but the meatloaf itself was perfect. I use ground turkey for my meatloaf so I used the amount of eggs and milk called for in the recipe because turkey meat tends to dry out. Forgot to take other reviewer's suggestions to cut back on the sugar and add Worcester sauce to the glaze, which I think it would have benefited from. I also substituted 1/2 tsp. onion powder for the onion since hubby and I don't like onions in our food. Ended up pouring the glaze over the top of the meatloaf to keep it moist per other's suggestions. Next time I make it, I'll make the changes to the glaze and see how it comes out.

Oatmeal Peanut Butter Cookies

These are good and I feel less bad about eating them with the oatmeal in them. I added slightly more flour and oatmeal per other's suggestions because I wanted a more textured cookie, and I had no problem with them spreading too much, even using all butter instead of shortening/margarine mix. I was afraid they were going to be too sweet, but the saltiness of the peanut butter, the buttery flavor and the sweetness of the sugar seem to balance each another out. I only gave it 4 stars because I can't say it's the best peanut butter cookie I've ever had, but it's pretty darn good! Maybe next time I'll add some vanilla extract per another reviewer's suggestion and see how that adds to the recipe. Would definitely make again, especially since I seem to always have these ingredients in the house.
