Best Brownies
These were soooo yummy!! I brought them to a Super Bowl party and everyone loved them. I was really impressed with how they came out and will NEVER buy a boxed brownie mix again. They are so easy to make and I typically have all the ingredients needed to make them, so I can whip them up anytime. I followed other reviewer's suggestions and slightly beat the eggs before adding to the melted butter and stirred in the dry ingredients just until everything was blended and my brownies came out moist, fudgy and perfect! These are definitely the best homemade brownies ever!

Lime Chicken Soft Tacos
This was very easy, but I wasn't crazy about the flavor. There was way too much pepper for my liking, but my husband really liked it. I substituted chile lime seasoning for the 1/2 lime and dried oregano. Next time I'll cut down the pepper by half and increase the chile lime seasoning. It took nowhere near 20 minutes to cook the diced chicken and I wouldn't recommend cooking it that long on med hi heat otherwise it will be very overcooked. It only took me about 7 min to initially cook the chicken until it was no longer pink and then I lowered heat and let simmer for another 5 min so the marinade would cook in. Very healthy and quick to whip up, though.

Whole Grain Waffles
These were very easy to make and quite filling. I substituted my son's organic unsweetened applesauce with cinnamon, thinking it would give it some good flavor, but didn't really taste it. Next time I'll probably add some cinnamon to the batter. Good, healthy recipe that made 8 Belgian waffles. 2 year old son liked them with some butter and organic honey on top. Would definitely make them again. I froze the leftovers as a quick breakfast so hopefully they'll be just as good after a quick thaw in the toaster.
