Easy Roasted Pork
This was so easy and soooo good! I used pork tenderloin, cooked for about 30 minutes in a 425 degree oven in a covered casserole dish and it was really juicy and yummy. I cut the sugar in 1/2 as well and didn't have cinnamon applesauce, so I used one of my son's Mott's applesauce cups and added about 1/2 tsp cinnamon. An absolutely PERFECT recipe for a busy, working Mom of two - requires such little prep and cook time it's a great, healthy weeknight dinner. Served with corn on the cob. My husband really enjoyed it and my 2 1/2 year old gobbled it down. This is definitely a keeper!

Grandma's Lemon Meringue Pie
I made this for Father's Day for my husband and he absolutely loved it. He said it was the best Lemon Meringue pie he's ever had. Maybe he was being overly-generous, but it really was good. It's definitely time-consuming, but well worth it if you like lemon. I used the juice of 3 lemons and extra fine sugar as suggested by another reviewer and the custard came out perfect. I let it sit on the counter to cool for an hour before refrigerating and the next day when it was time to serve, the consistency was absolutely perfect.

Seared Sea Scallops
These were very easy and tasty. I didn't have lemon pepper on hand so I used regular black pepper instead and lemon infused grapeseed oil rather than olive oil. They came out great! I also didn't have fresh parsley or lemon juice but I didn't even miss it. Next time I'll try it exactly as written as I do like lemon.
