Too Much Chocolate Cake

This is such a good recipe and simple to make. A co-worker first made it for an office birthday and I woke up the next morning thinking to myself "Why didn't I take another piece for today!!!". So I decided to make it this weekend for my Dad's and Sister's birthday celebration. It was as good as I remembered...but I still didn't get any leftovers. Sure could go for another piece right now! ;)

Spicy Sausage Ragu

We absolutely love this recipe. It's on our regular rotation. Great as is, but to make it a little healthier I use ground turkey and add Penzey's Italian Sausage Seasoning while using Tinkyada pasta which is made from brown rice. Delicious!

Mexican Rice III

We loved this rice. It had a great flavor and was very easy and I think this may have been the first time my rice didn't stick together! :) Served with Chef John's Shortcut Green Enchiladas - also easy and delicious - with some homemade guacamole. After trying several rice recipes, I'll keep this one as my go-to mexican rice. Thanks for sharing!

Italian Style Meatloaf I

I've been looking for something other than the traditional meatloaf and decided to try this one. My husband absolutely despises ketchup so I substituted chunky spaghetti sauce as another review suggested. I do not have a meatloaf pan so I formed a larger loaf (about 10 x 6 x 2) and baked it on a foil lined jelly roll pan. It turned out moist and delicious. Husband ate a second helping and said a couple of times that it was really good. Served it with angel hair pasta with butter and parmesan along with a bakery garlic loaf. This will be a keeper for us.

Party Mimosa

Family came out for dinner and fireworks. Served mimosas and all loved the flavor. Very refreshing drink. For those that cannot find the apricot mango juice, we found it in the organic section of our store - Santa Cruz brand.

Oatmeal Carmelitas

I started out making this for our cookie exchange here at work, but while typing out the recipe book we were handing out there seemed to be a lot of recipes with oatmeal and chocolate so I kept these for my husband and me to snack on and made something else. I'm SO glad I did.. I absolutely loved these cookies and they are now on my all-time favorite list. Absolutely agree that the 9x9 is not enough for 3 dozen but it is well worth doubling the recipe because the 9x9 is not enough for me. YUMMY!

Apple Cake and Butter Sauce

We celebrated my mom's 75th birthday today. Went out for Mexican food and margaritas and came home and had this for dessert. I baked the cake earlier but did not feel like shredding the apples so I cut them in small cubes. Then I made the sauce when we got home adding the 1 T. Amaretto as suggested in another review. It was delicious! Everyone was 'umm'ing and Mom said that was the best cake she had had in a long time. Gave her the leftovers to take home. Reminded us of a bread pudding. Next time I think I will serve warm with the warm sauce. This one is going in my keeper file for sure.

Pear and Blue Cheese Salad

This is my favorite salad to make but definitely just use half the dressing or it is too 'soupy' and lettuce will become wilted. I don't keep walnut on hand so I use olive oil in the dressing and it is just fine. I make this as a main course by adding about 1/4 cup dried cherries or cranberries, torn rotiesserie chicken that I pick up at the store, and serve it with a baked sweet potato. For the candied pecans, I use the Spicy Mixed Nuts from this site. It's an easy and delicious meal that doesn't keep me in the kitchen after working all day.

Tortellini Bacon Broccoli Salad

I love tortellini in salads and have been looking for one for some time. Glad I came across this one. Simple ingredients and it doesn't take long to put together. This salad has a similar flavor to the broccoli salad that we have at Thanksgiving. We really enjoyed the addition of the tortellini.

Pork Roast with Tangy Sauce

This is the second pork loin recipe I've tried and it is the best one so far. LOVED the sauce with this one and the flavor was good. Still not as moist as I would have liked but it could be that I'm must not used to cooking pork but I'll definitely try this one again.. maybe in the crock pot. It was a good Sunday dinner.

This was pretty good. Only added a little of the pepperoni but enjoyed the added flavor. All of the jarred sauces seem to taste the same to me. May try to make this again with homemade.

Blueberry Crisp II

This has to be one of the easiest desserts I have ever made. Made as written. Wonderful flavor and light crunchy topping. Something that you can throw together quickly if company drops by. A definite keeper!

Creamy Banana Pudding

I picked this recipe up in the produce area many years ago and once I made it, it became a favorite. Always gets rave reviews. It's one of those lick-the-bowl-clean type of desserts. Delicious!

Beef and Bean Chimichangas

We really enjoyed this dish especially since it was baked. I only made enough for two but had extra meat mixture left over so I added it to some homemade queso and it was EXCELLENT! I've started using that as my standard dip and my nephew said it was the best he'd ever had. Give it a try!

Baked Halibut Steaks

My husband and I both thought this was great. Our store was out of halibut so I bought orange roughy because it was the thickest white fish I could find. Served with steamed broccoli seasoned with garlic and parmesan. Fish was moist and delicious. Will make this often! Thanks!
