Shredded Beef Enchiladas

Excellent recipe. Husband told me that these are the best enchiladas he has ever had and he is a Mexican food fanatic. I made only a few changes: I put the roast in my crock pot on high for 6 hours and I also added 4 chopped garlic cloves and half a chopped onion. I also added about 6 ounces of beer. Like other reviewers have remarked, I also added a red chile sauce before I baked the enchiladas. This recipe is definitely a keeper, thank you!!!

Mile High Green Chili

Excellent green chili. I'm a CO native and this is in the top 5 green chili's that I have had in my life. I made it for my wedding shower which was a potluck style bbq in the fall. It was a HUGE hit. I would omit the cream cheese though, it's not necessary and I think it actually takes away from the authenticity. Maybe a dollop of sour cream is all it needs.

Fall French Onion Soup

I give the original recipe three stars because of the chicken broth. Onion and apple marry well with beef broth, especially if one calls this French Onion Soup, fall twist or not. I made it with beef broth, cut the apple cider to 3/4 cup, and used gala apples so as not to make this too tart. I seasoned the onion/apple mixture with 1 1/2 tsp. of sea salt and fresh ground pepper. I also added a tablespoon of flour to the apple and onion mixture 30 minutes before adding the liquids. I think the brandy was nice, but next time I'll use something that doesn't reduce to such a sweet flavor, like a dark and smoky cabernet. I also omitted the sugar from the bread all together, as I felt this would be too sweet and overpowering to the savory flavors of this soup. I also used a mixture of gruyere and gouda. With these small tweaks this is a 4 1/2 star recipe.

Slow-Cooker Chicken Tortilla Soup

I make this every fall, as soon as the weather turns chilly. I love to put this in the cooker before I leave, to then come home to the savory smell of this soup cooking. So cozy! I add a can of corn and a can of black beans for texture during the last hour of cook time. (I rinse both in a colander before I add them to the soup.) I always give extras to friends or freeze single servings in tupperware, as this makes a TON of soup.

Artichoke & Spinach Dip Restaurant Style

I made this for a cocktail party. I made a few other nibbles as well, but this recipe was the star of the show! It was gone within an hour. I made this in a slow cooker set on low for two hours, then on warm. I also add a 1/2 tsp of crushed red pepper for a little extra spice. On request, I'll be taking this to a Halloween party next week. Delicious!
