Cathy's Banana Bread

Reviewed: Feb. 25, 2014
Fantastic!! Very easy and simply delicious! I changed things slightly. Used 1 cup sour cream, and 1/3 cup greek yogurt, added 1 tsp cinnamon, and 1/4 tsp pumpkin pie spice to the batter. Then before I popped the loaves into the oven, I sprinkled a mixture of 1/4 cup brown sugar, 3 tblsp flour, 1/2 tsp cinnamon and 2 tblsp melted butter, over the top. Wonderful flavor and very moist and fluffy.

Quick Quiche

Reviewed: Feb. 1, 2014
Exceptional taste and easy to make!! Only change I make is to add red peppers, and reduce the milk just a touch, just so mixture would fit in pie plate. I also put onions and red peppers right on top of cheese, and then added egg mixture. Much easier to whisk liquids and flour together that way.

Golden Rum Cake

Reviewed: Aug. 29, 2012
One of the best cakes I've ever had! Amazing flavour! I added 1/2 cup milk instead of the water, and I didn't wait for the cake to cool before I added the rum glaze. I just left the cake in the pan and poked holes in the cake with the end of a chopstick, and poured the glaze over top. Worked perfectly. I'm making another as I write this review! I covered the cake with a cream cheese frosting. Fantastic!!!

Excellent recipe!! I would suggest though that if you want them without the skins...then peel them before cooking! Very time consuming.

French Baguettes

Reviewed: Jan. 3, 2012
Very good recipe! A friend of mine who is French, asked me how I made this...he said it was exactly how a french baguette should taste! I ignore the cutting sizes, because I like longer thinner baguettes...otherwise just follow the recipe.

Fantastic, and very easy bread recipe! Turns out every time! If you want it a little less sweet, just cut down on the sugar.

Soft, Moist and Gooey Cinnamon Buns

Reviewed: Dec. 27, 2011
OMG!!! I just took these out of the oven, and covered them in Cream Cheese icing...these are by far the best Cinnamon Buns I have ever had! CinnaBon who needs you!!! LOL I used my mix master to prepare the dough, following one reviewers instructions, and then continued with the recipe's directions. Don't need to change a thing! Perfection!!!

Peppered Shrimp Alfredo

Reviewed: Jan. 7, 2010
Delicious!!! I made my own Alfredo Sauce using "Easy Alfredo Sauce 1" on this site. You won't need the extra cream the recipe calls for. Turned out fantastic! One word of caution...if you don't like your food a little "hot and spicy" you might want to half the cayenne pepper.

Baked Honey Mustard Chicken

Reviewed: Oct. 24, 2009
Simply fantastic!!! So easy to prepare, and the taste is heavenly! I added a little curry powder, the same amount as the paprika...I don't know if it enhanced the taste, but it was delicious! I substituted 1/3 of the mustard with Dijon. Also put 2 tbls. melted butter into the baking dish to create a little more juice. I baked for 25 minutes covered with tin foil, then removed...basted with the remaining mustard sauce...mixing some of it into the butter, for another 20 minutes. When finished baking I poured the butter and mustard drippings into a fry pan, added a dash of garlic salt...threw in some peeled raw shrimp and scallops and sauteed for 4 minutes, and served on a bed of rice. Drizzle remaining glaze over the rice. OMG!!! Your guests will be begging for this recipe!!! Highly recommend this dish. Serve with steamed broccoli, and a lettuce of your choice with an Asian Sesame dressing.

Lemon Pepper Shrimp with Mustard

Reviewed: Sep. 12, 2008
Another wonderful dish!! I tend to add more spices than normal, and I added a little too much red pepper flakes, but was still fantastic! Just hot! I added a little more wine than called for, threw in some orange and green peppers for color along with tomato chunks, and served it on basmati rice. Delicious!!

Seafood Melange

Another recipe that deserves mention!! This was fantastic! Easy to prepare ahead of time if you're having guests, and then just pop it in the oven when you're ready for dinner! Your guests will love them. You can use imitation crab, but if you can't beat the flavor of real crab..especially if you're cooking for friends.

Greek Chicken Pasta

Reviewed: Sep. 9, 2008
Another fantastic recipe! If you love greek food and pasta, you'll love this dish! A great recipe for dinner guests...it's easy to prepare everything you need ahead of time, and then a quick 10 minutes of cooking and it's done! I added orange and green peppers for color, and also added a couple of tablespoons of the marinade from the artichoke hearts. mmmm mmmm good! Also added more olive oil just before taking it out of the pan. More flavor and less dry. Enjoy!

Stuffed Sole

Reviewed: Sep. 8, 2008
Simply amazing!!! This recipe is so easy to make, and tastes absolutely amazing! My partner is a frenchman, and very fussy about food, and he loves this dish...as do several friends we've had over for dinner! Tastes great just following the recipe, or you can adjust the wine or the lemon, or any of the ingredients for that matter, to suit your tastes. Fool proof and one worth adding to your recipe book!!! 5 Stars definitely!!
